Apple Bread Recipe Without Applesauce

And combine the two I will, as I was inspired by one of my running coach's (Andi Ripley of AtoZRunning) recipe for runner's bread:

Spiced Apple Bread (easy Quick Bread)

This bread was simple to make, rich in protein and whole grains, lower in sugar, and a great base for whichever way I wanted to take it.

Thought I played around with lemon poppy seed bread and mixed berry bread, I quickly realized I wanted to make an homage to East Coast fall with this recipe. You know, stuff it full of apples and pile in enough cinnamon to keep me smiling long after I've eaten a piece.

And, given the increased training load right now, I need all the carb sources I can get. This bread is particularly great for those early mornings before hard runs -- when I need to fuel up but don't have the biggest appetite.

But one bite into this bread and suddenly food sounds like a great idea. A few miles into the run, I'm so glad for the energy to power me through the miles.

No adjustments are needed to make this apple bread at high altitude; just follow the directions as listed for a moist and fluffy high altitude quick bread!

Easy Apple Baked Oatmeal

This whole wheat apple bread is so tasty slathered with peanut butter for a pre-run breakfast (see my notes above) or toasted with a brush of butter (or even better, Instant Pot Apple Butter) for afternoon treat. You can even toast up a slice and serve it with a scoop of vanilla ice cream for a faux apple pie a la mode experience. So delicious!

Leftovers store covered in an airtight container at room temperature for 3-4 days. They are best consumed within the first 36 hours, however.

Leftover apple bread can also be frozen in a freezer safe container for up to 3 months. For easiest defrosting, store the bread sliced with small pieces of parchment paper in between the slices (so you can just pop out individual pieces of bread, defrost at room temperature for 10-15 minutes, and go!).

How long will the Apple Bread stay fresh? To prevent your apple cinnamon bread from getting dry, should be stored at room temperature in an airtight container, wrapped in plastic or in a large, resealable bag for up to 5 days.

Can Apple Cinnamon Bread be frozen? Yes! Let the bread cool completely and then wrap the bread (in slices or as a whole loaf) in two layers of plastic wrap followed by a layer of aluminum foil. Place in a freezer ziploc bag and freeze for up to 2 months. Bread should be thawed at room temperature. Simply unwrap the number of slices or whole loaf and let come to room temperature. Enjoy!

Can I double the recipe? You sure can. Double up the ingredients and pans. Make one loaf for now and freeze the other. Or be the best neighbor ever and share the second one!

I really enjoy apple season and the fall flavors in apple-flavored baked goods. This easy bread can be made year-round but is especially good this time of year. I’m actually sharing two versions of apple bread today. One is a plain, low-sugar applesauce bread. The other is a sweet apple bread. Both versions are super easy and delicious.

Apple Bread Recipe

Self-Rising Flour: This recipe uses self-rising flour which already has baking powder and salt added to the flour. If you don’t have self-rising flour, you can make your own using all-purpose flour,  baking powder and salt. I share the exact amounts in the recipe card at the end of the post. I have not tried this with gluten-free flour.

Applesauce: You can use storebought or homemade applesauce. You can use unsweetened applesauce if you want low-sugar bread. It will still have a hint of sweetness but will not be a sweet bread. You can use sweetened applesauce and your bread will be lightly sweetened.

Milk or Condensed Milk: If you want to keep your bread low sugar or not sweetened, use regular milk or a milk substitute like almond milk, soy milk, etc. You can use low fat, fat free or whole milk. If you want a sweet bread, use condensed milk.

Flourless Apple Bread (no Flour, Butter Or Oil)

Pour the bread batter into the prepared pan. Bake the bread in the middle of the oven for 45 to 50 minutes or until it’s golden brown on top and a toothpick comes out clean.
