While the oven preheats, add room temperature butter and sugar to a mixing bowl. Mix on medium to high speed with a paddle attachment to cream butter and sugar together. When the butter mixture is light and fluffy, add the eggs and mix again just until combined.

Next, add the flour, baking soda, and salt to a medium-sized bowl. Whisk to mix it then add the flour mixture to the butter-sugar-egg mixture, and mix until it’s combined.

Add the sour cream, vanilla, and mashed bananas. Mix again. Finally, chop or smash the walnuts and stir them into the batter.
