Vegan Pancake Bread Recipe

This recipe for Trader Joe’s pancake bread has the same flavor and texture but it’s made at home! Bonus? It’s completely vegan and requires minimal prep!

When I first tried the pancake bread from Trader Joe’s, I knew I had to recreate it. The concept is pure genius- Whenever you crave pancakes, skip the extensive process and have it in a loaf form!

I love having a slice of this bread for breakfast, for a snack, or even a comforting dessert. The best part is that it is completely vegan, unlike the original version!

The Fluffiest Vegan Pancakes Recipe By Tasty

YES! After sampling both the Trader Joe’s version and this one, I can safely say it tastes just as good…if not better.

Start by adding the sugar, melted butter, maple syrup, vanilla and maple extract, milk of choice, apple cider vinegar, and coconut cream into a mixing bowl. Whisk very well, until smooth. Let the mixture sit for 10 minutes, for it to slightly curdle. In a separate small bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. After 10 minutes, gently fold through the dry ingredients into the wet.

Now, transfer the batter into a greased loaf pan and bake for 20 minutes. While the bread is baking, prepare the crumb topping. Combine all the ingredients into a mixing bowl and mix together until a crumbly texture remains. 

The Fluffiest Vegan Pancakes Ever [and So Easy!]

Remove the bread from the oven and sprinkle the crumb topping over it. Place back in the oven and cook for a further 50-60 minutes, or until a skewer comes out clean. Remove the bread from the oven and let it cool in the pan for 20 minutes, before carefully removing it from the pan and placing it onto a wire rack to cool completely. Serve with maple syrup. 

TO STORE: Pancake bread can be stored at room temperature, covered. They will keep well for up to 3 days. If you’d like the bread to keep longer, store it in the freezer for up to 2 weeks.

I did a lot of research before testing this recipe, and the Trader Joe’s bread and all the pancake bread recipes I found had malted milk powder in them. So, I did research on a good vegan replacement and all I could find was maca powder. Since one of my main goals is to not use ingredients that aren’t generally readily available, I had to really think about this one!

Thus, toasted oat flour was introduced. I thought, ‘what could I use to create that nutty, creamy flavor that malted milk powder adds?’ So, I toasted oats, and ground them up and

! That was it. The toasted oat flour is optional, but I do recommend it! It tastes nutty and sweet and it really just tastes like breakfast!

Easy Homemade Vegan Pancakes Recipe (without Dairy)

Serve warm with vegan butter and maple syrup. Serve cold as a grab and go snack. Toast it and slather with jam. The possibilities are endless and oh so fun! This recipe makes a pretty large loaf of vegan blueberry pancake bread, so you can share with friends or eat it for breakfast for a few days! My favorite thing to do is drizzle it with maple syrup. Oh and 3 children were asked for their opinions on it, and they all gave it two thumbs up!

*To make toasted oat flour, spread out about 1/4 cup oats on to a baking sheet and toast for 5-7 minutes at 350 degrees(F). Then pulse in a blender or food processor to turn into flour. This is totally optional, but I highly recommend it!

Trader Joe’s comes out with original products every now and then that are really creative and tend to amass a sort of cult following + excitement. Some examples include the Everything But The Bagel seasoning and Cauliflower Gnocchi that fly off the shelves and become so difficult to find in stores due to demand.

Part of that might be social media, with pages dedicated to TJ finds and also the health and wellness foodies on the platform, but I have to give it up to them because some of these products are really very unique. The most recent product that caught my eye was Trader Joe’s Pancake Bread, and while the majority of their products tend to be accidentally vegan-friendly, this loaf was sadly not.

That being said, I thought the concept was absolutely genius, and I love a good loaf (e.g., my Fluffy Banana Bread), so I set out to re-create a home Vegan Pancake Bread with a healthier twist!

But how could I recreate this Pancake Bread without having tried it first myself? Well, I employed a team of expert taste testers (AKA non-vegan friends of mine) to eat it and describe the textures and flavours. I also searched the internet and discovered several TJ fan blogs that described the loaf in great detail. From my research, I gathered that the loaf was similar to a pound cake in many ways but not as maple-y as you’d think. More of an aftertaste of sorts. The loaf also had a malty flavour, and of course, a crunchy crumble to top, but overall, it wasn’t overwhelmingly sweet.

This recipe is easy to make and is a great alternative for anyone who feels a little bit left out of the Pancake Bread world right now!
