White Spelt Bread Recipe Bread Machine

I simply love spelt bread. The taste is hearty, but the texture is tender, and still somewhat “fluffy.” This particular recipe is 100% whole grain, and makes fulfilling toast or sandwich bread. It’s also dairy-free, nut-free, soy-free, and even vegan-friendly. Unlike many bread machine recipes, it doesn’t call for any milk powder or other milk-based ingredients. And if you don’t have a bread maker, don’t worry! I’ve included directions for making it by hand, or you can try my Cinnamon Spelt Bread Recipe.

Forget the milk powder. This spelt bread turns out beautifully, without the need for any additives or dairy. The original recipe is made for your bread maker. But if you don’t have one, don’t worry, you can make it by hand instead! We originally shared this recipe way back in 2006, but I’ve just updated with these alternate instructions, new photos, and nutrition facts.

Wholemeal Spelt Cinnamon Toast Bread (bread Machine)

All bread makers are different, so be sure to follow the instructions for yours on adding ingredients, cycles, browning, etc. I use whole grain spelt flour, but you can substitute white spelt flour, if preferred.

Vital Wheat Gluten: It is sold in the baking section or online, and helps the elasticity of the bread. If you want to keep the gluten low, you can omit it, but add 2 teaspoons lemon juice after the oil.

However, the savvy bread maker will scoop up these specialty items and incorporate them into their bread. They know that these recipes are great and that using specialty flours can help stretch their supply of regular bread flour.

Talk about ancient grains, spelt was an important part of people’s diets in the Bronze Age! It’s mentioned in the bible. It also has a place in Greek mythology, as spelt was a gift to the Greeks from the goddess Demeter.

Spelt is a cereal grain in the wheat family. Some people may find spelt flour easier to digest than regular wheat flour.

Follow the instructions that came with your bread machine in terms of which ingredients to put in the bread machine first.With my machine (aZojirushi Virtuoso Breadmaker

Check on the dough after five or ten minutes of kneading. Pop the top of the bread machine and look at the dough. It should be a smooth, round ball.

If the dough is too dry add liquid a teaspoon at a time until it looks right. If it looks too wet, add flour a tablespoon at a time until it looks good.

Receiving the bread machine from my wonderful Aunt and Uncle is a true blessing in disguise, we are even lucky enough to have a Speciality Spelt Loaf setting on ours. Now, spelt flour is widely known to have a rather excitable nature, proving more quickly than your average bread flour – due to the high protein content and quality of our Toad’s Mill spelt flour it is a very active and delicious flour.

I have played around with the bread machine following the recipe, increasing the hydration, decreasing the hydration and six months on and I think I have finally cracked the art of making a Light White Spelt loaf. It is always a fabulous feeling when you lift the lid after hearing the three beeps and you can see a nicely risen loaf; I have had a few occasions where a more  cuboidal/square loaf has surprised me, but this is perfect for lunch box sandwiches with any left over Sunday lunch roast beef and horseradish, and still has a delicious flavour and ideal texture.

Below is the recipe that I have been using, I have set the bread machine in advance over night for the loaf to be ready for breakfast bacon sandwiches with heavenly warm fresh bread.

Quick Spelt Bread Recipe [+video]

Put the ingredients into the bread machine bowl as they are ordered above, with the yeast in first and the water last, so the yeast does not get wet straight away.

If you have a “speciality” setting on your machine then use that set to “large loaf”, the bake normally takes 4 ½ hours to produce a nicely risen loaf. You can try the “normal” setting, but this may result in a squarer loaf as Spelt does tend to prove a lot quicker than normal wheat flour and will therefore lose some of its rise.These soft spelt flour bread buns are pillowy, feel a little luxurious (with the butter and egg) and taste amazing with pretty much everything from a burger to strong cheddar stuffed between them.

I’ve been making spelt bread in my bread machine for a couple of years now. Sometimes I make a loaf and bake the bread in situ. Other times, like with these spelt bread buns, I use the machine to make the dough and then do the rest by hand. I love spelt flour (obvs) but sometimes find the way it behaves in bread a little unpredictable. Blow-outs occur with more frequency than with regular flour and the bread can bake a little lopsided.

I’ve tried pretty much everything to prevent this from happening. Although the taste and texture is no way impaired, it can make spelt flour bread buns in particular look a little ugly (ah, poor buggers). I have found it helps to allow the bread to have a long proofing before baking and using a lower temperature. I also score them before putting them in the oven. In the past, I’ve tried using steam to bake bread , too.

This time (when the photos were taken), the soft spelt flour bread buns rose so well that when baked, they just kind of merged into one. I liked it, though. It made the middles super soft. If you’d rather they didn’t become one, just place the dough balls futher apart.

I’ve made this recipe a million and one times (or so it feels) and it never fails. I’ve also used the dough recipe to make sweet bread recipes, too.
