This is my favorite banana bread recipe, one that I’ve cherished for years. It’s one of those classic recipes that you start to know by heart, just like a good pie crust or chocolate chip cookies recipe. This bread comes to mind first when I have leftover spotty bananas on the counter, and it’s the bread that’s on constant rotation in my freezer stash.

I’ve tried dozens of banana bread recipes over the years, and when I baked and originally published this recipe back in 2013, I never looked back.

This bread uses more mashed bananas than similar recipes. Add 2 whole cups (460g) of mashed banana, which is about 4 large bananas. More banana = more moisture and flavor in the finished loaf.

The Easiest Banana Bread

Did you know you can use your electric mixer to mash bananas? Break or slice the spotty bananas into large pieces and place in the bowl of your stand mixer—or use a regular mixing bowl and your hand mixer. Begin beating on low, then gradually increase to medium-high speed as the bananas break down into mashed banana. Transfer the bananas to another bowl and use the mixing bowl for the butter and sugar. (No need to clean it—some mashed banana remnants is fine.)

For banana nut bread, add 3/4 cup of chopped nuts to the banana bread batter; I like using either pecans or walnuts. If you’re nuts for nuts (LOL), you’ll enjoy the toasty slight crunch nestled inside the soft crumbs. If you’re not a nut person, feel free to leave them out or replace with chocolate chips. For a whole wheat version, try my whole wheat banana bread.

Yes and I do this often. Thaw the frozen bananas at room temperature. Drain off any excess liquid, mash, then use as instructed in the recipe below. See How to Freeze & Thaw Bananas for Baking. Try not to mash too much or else you’ll be left with 2 cups of banana-y liquid; some chunks are great.

Use your stand mixer to create soft, moist banana bread that’s loaded with flavor. Before mixing ingredients with your stand mixer, you can use the ® Flat Beater accessory to mash ripe bananas to the desired consistency for your loaf. Then, follow the instructions below to gradually incorporate wet and dry ingredients to finish your batter. 

My Favorite Banana Bread Recipe

Preheat the oven according to your recipe’s instructions and prepare a loaf pan. It’s best to grease a loaf pan by spreading shortening, cooking oil or butter using a paper towel or clean kitchen towel. Be sure the oven is fully preheated before putting bread in, as bread can become dry, crumbly or dense if it starts out in a cold oven.

Fit your stand mixer with the flat beater. Peel ripe bananas, break into 1-2 inch pieces as you add them to the stand mixer bowl. Beat on speed 2-4 until desired consistency is reached. Some lumps may remain at this stage.

Add melted butter and mix on speed 2-4 again until incorporated. Next, add eggs and sugar to the bowl of your stand mixer. Beat on medium speed until ingredients are combined.

Mix flour, baking soda and salt in a separate bowl, then slowly add to the stand mixer bowl and stir until just combined. If desired, use the ® Sifter + Scale Attachment or other sifter when adding flour to help you break up any lumps and achieve consistent results.

Incorporate mix-ins like chopped nuts, fruit or chocolate by using a spatula to gently fold ingredients using wide, slow strokes from the bottom of the bowl. Overmixed batters can create a rubbery, dense loaf, so be sure to stop folding as soon as mix-ins are evenly incorporated.

Pour batter into your prepared loaf pan, then bake per your recipe’s instructions. Try baking on the center rack so your loaf is equal distance from the top and bottom heating elements. Check for doneness by inserting a toothpick into the center of the bread loaf and take the bread out once the toothpick comes out clean.
