This lemon cranberry bread has a super simple lemon glaze on it. All you need is powdered sugar (also called icing sugar or confectioner’s sugar) and fresh lemon juice. Stir them together until smooth and drizzle it over top of the cooled bread.

I tried the recipe both ways, with lemon juice in the batter and without, and I liked it best this way. I found most the lemon flavour in the bread came from the lemon zest and using the lemon juice in the glaze gave an extra burst of lemon that I liked better then adding it to the batter. You could certainly add it into the bread instead if you like, I just preferred it the way it's written. I've also made it with lemon flavouring instead of vanilla and that was good too, and added a little extra lemon flavour.

Frozen cranberries will work just fine - I've used them before. Don't thaw them before using though. I know people have made it with dried cranberries and liked it, but I haven't myself. The texture will obviously be different with dried ones, but I think it will still be very good. You might want to decrease the sugar a bit though as the dried cranberries usually have sugar added and will make the bread sweeter whereas fresh/frozen cranberries are quite tart.This lemon cranberry bread is quick and easy to make. Cranberry Lemon Loaf • Domestic Superhero

Easy to make. It looks like there are lots of steps but the recipe is easy to follow and simple to make.

In a large bowl or a stand mixer with the paddle attachment on beat together butter and sugar until light and fluffy (usually take about 3 minutes).

Add eggs one at a time and mix in completely before adding the next egg. You want this cake to be light and fluffy so after all eggs are added continue to mix for another 2 minutes. Stir in the lemon zest, lemon juice, and vanilla extract.

Cranberry Orange Bread (with Glaze)

While continue to mix, add in 1/3 of the dry ingredients, half of the sour cream, another 1/3 of the dry ingredients, the rest of the sour cream, and finally the last of the dry ingredients. Fold in the cranberries.

Bake for 1 hour or until a toothpick inserted into the centre comes out clean. Cool in the pan for 10 minutes before moving to a wire rack to cool completely.

In a medium sized bowl add lemon juice, and powdered sugar. Mix until smooth and no lumps remain. If the mixture is too thick you can add a little more lemon juice. Drizzle the glaze over you cooled cake. Let the glaze dry before slicing.

One Bowl Raspberry Lemon Bread

Yes, you do. Having your cold ingredients at room temperature allows them to better mix in to the batter so your loaf is light and fluffy. If your like me and forget to take stuff out of the fridge, just microwave your butter and sour cream for a few sends until it's at room temperature. For the eggs run them under warm water for a few minutes.

You can make the glaze as thick or as thin as you like, you can even leave it off if you want. For a thicker glaze start with 1 tbsp lemon juice and mix it in. Add small amounts of lemon juice until you get the texture of glaze you want.

Baking is one of my favorite pastimes and I love making my own bread, however, you don’t always have time to allow it to rise and that’s where quick breads like this come in. Made with cranberry and orange it’s the perfect seasonal treat!

Toss the cranberries in flour and set aside, then in a bowl whisk together the flour, baking powder and salt. In an electric mixture cream together the butter and sugar before adding the egg. Slowly add the flour mixture to the cream and butter, add in the milk and fold in the cranberries and lemon zest.

Pour the batter into a prepared loaf tin and bake in a preheated oven, Let cool and spoon over the lemon glaze.
