Here are a few suggestions for you. Make sure you have large enough slices of bread, so that the bread can hold the filling inside. And it's better if the slices are cut thin, so there is more space inside. Also I suggest using small or medium eggs. A large egg might over-spill, when you use a regular sized muffin cup.

3. Place each slice in each muffin cup, pressing it down with your fingers. Don't worry if the bread breaks on the bottom, it will be fine. I used a silicone mold, so no greasing is required. If you are not, make sure to spray or grease with a little bit of butter the bottom and sides of the cup.

6. Add the egg, trying not to break the yolk. It might overflow if the egg is too big... don't worry! Medium or small eggs work better in this recipe.

7. Sprinkle with salt, and pepper. Remember the pancetta or bacon tends to be salty so don't use too much salt. And what goes better with eggs than bacon?

My family loves this Italian rendition of traditional bacon and eggs. These pancetta fried eggs cut cooking time significantly since the pancetta is cooked over the eggs, as opposed to in the microwave or another pan like traditional bacon.

Bacon and pancetta are both made from pork bellies. While bacon is brined and then smoked, pancetta is made by seasoning a pork belly side with salt and pepper. It’s cured, but it isn’t smoked, which makes it fresher and lighter tasting than North American bacon.

Most of us think of bacon in terms of breakfast as an accompaniment to eggs, or as an extra ingredient in a burger. Add to that short list the occasional BLT, and this is pretty much the extent to which North Americans consume bacon.

On the contrary, Italians adore their pancetta and include it in as many dishes as possible-it’s used to flavour other foods, such as sauces and stews, and it’s almost always included in an antipasto platter.

Back to the recipe, if you can even call it that. All you need are eggs and pancetta-and of course a little extra virgin olive oil for frying.

The joys of living in a small town in the Italian countryside (if only for two months during the summer) is that there is always at least one person you know who grows their own produce, makes their own cheeses and meats, and has the odd chicken or two in their yard.

These pancetta fried eggs take minutes to prepare since there’s no need to wait for the bacon to crisp up in the pan or microwave, and they’re just as delicious as traditional fried eggs with bacon-with an Italian twist, of course!

Heat olive oil in a small frying pan on medium heat for 1-2 minutes. Add the eggs and cook for 2-3 minutes. Season with salt and pepper, as desired.

Layer two slices of pancetta onto each egg. Cover with a lid and cook on medium heat for 2-3 minutes or until the pancetta is translucent in colour. Alternatively, if you prefer your eggs over easy, flip the eggs first, cook for 1-2 minutes, then layer the pancetta onto the eggs.

For a crispy texture, increase the heat to high the flip over the eggs (pancetta side down) and cook for another 1-2 minutes or until crispy.

There is nothing better than collecting eggs that have just been laid from your own chickens. These eggs taste better than store-bought eggs and knowing what you feed the chickens laying your eggs also means that you know that your eggs are very nutritious as well. It took our chickens here a little longer than expected to start producing eggs, but all but one is now laying which ensures we always have a ready supply of very fresh eggs! Having a constant egg bounty in my refrigerator encourages me to find new and tasty ways to prepare eggs, and this dish is one of my favorite quick lunch dishes that I make ofen.

Warm Bread, Pancetta, & Poached Egg Salad W/ Parmesan

Folks are often surprised to learn that Italians living in Italy do not eat eggs for breakfast. Eggs instead are enjoyed as light meals for lunch or dinner, but breakfast for most Italians is a cup of coffee, often containing milk like a cappuccino along with something sweet such as brioche, a few cookies, or a small breakfast sweet. I am not a breakfast eater myself, but I do enjoy traditional breakfast foods such
