Gluten Free Bread Recipe In Slow Cooker

I tried and failed and tried and failed again and again to make all different sorts of gluten free bread in my crock pot. But all's well that ends (well), right? I am pleased and proud to announce … that I have successfully baked a loaf of gluten free bread in my crock-pot-slow-cooker-whatever-you-like-to-call-it! You know what this means, right? We will be baking bread all summer long without heating up the house.

My biggest success so far has been the Gluten Free English Muffin Bread from page 74 of Gluten Free on a Shoestring Bakes Bread, so that's the one we'll talk about today. But I'm creeping up on success with other breads, too, so fire up that slow cooker and let's get started! Hey did I mention that you skip the rise—the loaf rises right there in the slow cooker!

Gluten Free Brown Bread —wheat Free With A Hearty, Wheaty Taste

When you're baking this bread in the slow cooker, there are a few tricks to the trade. But good news! I'm gonna tell you alllll of them. After all, what's the point of my ruining batch after batch of bread from GFOAS Bakes Bread if I don't tell you all my secrets so you can skip right to the success? Secret #1: a steamer basket. Secret #2 (from reader Emma Hohl on Facebook): remove the slow cooker insert. Secret #3: vent the top.

The sides and bottom will brown, but the top simply will not. Like a nice brown top? Just place the loaf under your oven's broiler for a few minutes. The kitchen will stay cool, but your loaf will be brown on top. Score! Now the loaf will not rise as evenly as it does in the oven. Especially with the cover propped up a bit, the heat of your slow cooker is just not as even or consistent as the heat of your oven.

I was seriously considering throwing in the towel on this entire endeavor … until I asked YOU for tips on Facebook. And so many of you had suggestions that would have taken me many more failures to arrive at, if I arrived at them at all. If you aren't gluten free, this might not mean as much to you as it does to me. When you go gluten free, you miss bread.

You miss it a lot. There are substitutes---you can have brown rice or corn tortilla wraps, you can put your sandwich fixings on rice cakes, and you can use tortilla chips to scoop up your favorite dip.

But then! Whole Foods came out with a line of gluten free baking mixes that were not only inexpensive, but good. As in tasty. As in light and airy. As in not only palatable, but delicious.

And guess what I just figured out? The dough rises wonderfully when it is cooked in a hot humid environment, like in a CROCKPOT !!!

Gluten Free Slow Cooker Bread

My family loves bread, and because we are “mostly” gluten-free due to my son’s sensitivity and my own, breads are my guiltiest pleasure and I’ve had to push myself to learn how to enjoy food without it.

I wanted so badly to be able to provide my family homemade bread without all the stress of feeling like a pretend baker, which is why I was so intrigued and excited at the prospect of what seemed to be an effortless method for bread-making.

Even though my excitement was piqued, the first recipe was not gluten-free. “Surely, if there are Crock-Pot® bread recipes now, then there’s got to be gluten-free slow-cooker bread recipes, as well” I thought to myself.

Gluten Free Bread Recipe (vegan, Yeast Free)

With Google on my side, I soon stumbled upona very helpful blog by Stephanie O’dea, who explained that the boxed gluten-free bread mix from Whole Foods Market would work perfectly for the Crock-Pot®.

Unfortunately, the closest Whole Foods Market to me was over an hour away, but I did have another box of gluten-free bread from Gluten-Free Pantry.

I followed her directions and my loaf rose beautifully, but with my six-quart Crock-Pot®, I could only use a regular sized bread pan.

The Best Gluten Free Bread (no Knead!)

Onmy second attempt, Iput in half the amount split between two pans, thinking itwould rise to the top of the pan and I would get two loaves out of it.

I also did not use a spoon to prop open the lid like Stephanie did with her recipe, which is supposed to help it cook more evenly.

Instead, I used an oval white Corelle® serving dish. It was oven-safe and the same height as the bread pan, only wider.

Crock Pot Zucchini Bread (gluten Free)

My hope was that the excess space would allow for the bread to rise to the top without spilling over because it could spread out more.

I am beyond pleased with this and excited to share it with you, because it wasn’t difficult at all once I discovered a good system.

It’s less expensive to run a Crock-Pot® than most ovens, and you can make a plethora of slow-cooker bread recipes every summer without heating up your kitchen.

Use a largeslow-cookerif you have one. Mine is asix-quart oval Crock-Pot®, but you could make breads in a circle slow-cooker. You may even have an Instant Pot (InstaPot).
