Granary Bread Recipe For Bread Maker

For ages I’ve been using my Panasonic bread maker to make dough, which I shape in a banneton and bake in an oven. Now I’ve enthusiastically returned to using the bread maker to make a whole loaf from start to finish. I can’t argue with the convenience of it; add a few ingredients to the bread pan, don’t forget the yeast (like I did the other day, ugh) and 3-5 hours later a warm, pillowy loaf appears, hopefully in time for lunch.

I mostly make variations of a wholemeal and white loaf using 50% or 70% wholemeal flour. It doesn’t really matter which ratio is used - my Panasonic recipe booklet lists the same amount of water, salt, sugar, butter and yeast for a 50%, 70% and 100% wholemeal loaf.

If I have enough time I use menu 5, the 5 hour ‘whole wheat’ setting. The 3 hour ‘rapid whole wheat’ setting (menu 6) is fine too but the bread doesn’t rise quite as much.

I get on well with Allinson’s flour but I’m not especially loyal to any brand; it’s just what I have in my cupboard at the moment. I make a medium loaf as there’s only two of us (Panasonic’s recipe booklet calls it medium, I think it’s small) but I’ve listed the quantities for a large and extra large loaf as well.

The Panasonic recipe book advises using butter for this recipe but I use 12g of extra virgin olive oil instead. I remember reading on Nigella’s website that 150ml of olive oil can sometimes replace 200g butter when baking a cake so I use the same 0.75 ratio.

A reminder in case you didn't know (I didn't until recently): 1ml of water weighs 1g so I weigh the water on my digital scale rather than using a measuring jug as it's quicker and more accurate.

If you want to use the 'rapid whole wheat' 3 hour programme the ingredient quantities are the same but you'll need to add an extra ¼ teaspoon of dried yeast. A Granary loaf is a wholesome, nutty, tasty and nutritious bread, but did you know just how easy it is to make your own? Read on and find out!

As a child I was a strictly white bread person, and I loved it whether it was fresh from the bakery, or came thinly sliced in a plastic bag.

These days my tastes are a bit adventurous and, of all the breads I have made recently (from the simple white loaf to the unusual barley bread and then my experiments with sourdough starters!), this granary loaf has to be my favourite.

Delicious Homemade Granary Seeded Loaf Recipe ⋆ Who Do I Do

Nutty, with a rich, wholesome, slightly sweet flavour, my easy granary loaf recipe is perfect to eat thickly spread with butter or toasted with jam.

Granary Bread is made with granary flour, which is trademarked by Rank Hovis Ltd. So, unless you buy your granary flour from Hovis, it will come under different names, but will be a mixture of some of all of the following ingredients:

I love the selection of comparable flours that Cotswold Flour do, but your own favourite flour company will sell a very similar in-house blend.

Farmhouse Loaf From The Ultimate Bread Machine Cookbook By Jennie Shapter

It is this special blend of flour with a malt flour that gives your loaves a distinctive flavour: rich, slightly sweet and much more satisfying than a white loaf. My recipe uses molasses to enhance that malty flavour (although you can also use treacle). Some sunflower seeds add an additional interesting crunch, and you could create your own blend should you find yourself completely enthralled by this delicious loaf.

A homemade granary loaf lasts a long time (certainly longer than, say a sourdough loaf), and is a really easy bread to make, perhaps the easiest one I have tried so far. I had a concern that I hadn't kneaded it for long enough as the dough is quite sticky, but still it rose beautifully. If you like brown bread, and want to make your own, I certainly recommend this for the novice bread maker.

Hint: I sprinkled my loaf with sunflower seeds and some toasted malt flakes, but the loaf rose so much that they all popped off! Instead, whilst the seeds look delightful, it might be better to just stir more into the dough!

Malthouse Bread Machine Loaf

I made a small 1lb loaf and then a freeform loaf, just to compare the two processes, and both worked beautifully. I don't see why you couldn't make one large loaf in a standard 2lb loaf tin, or one large, round free-form loaf.

If wrapped up well or kept in an airtight container (once cooled), this loaf will be good for up to a week, and maybe longer (although might need toasting).

You can freeze these loaves. Once cool, wrap in several layers of clingfilm and freeze for up to 3 months. To thaw, unwrap and place in a low oven.

If you love the idea of baking homemade bread but are put off by all the hands on time it takes then you've come to the right place.

Easy Slow Cooker Wholemeal Bread

My Easy Wholemeal Bread recipe takes literally minutes to prepare, there is no kneading involved at all and proving and baking happens as you get on with other stuff.  Make sure you set a timer though, as it's so easy to lose track of time.

I've always loved crusty breads the most and this one has got a lovely golden crust with a bit of crunch. If you prefer softer crust you can simply cover your freshly baked bread gently with a clean tea towel as it cools which will makes it softer.

Easy

No you don't. I've baked this bread numerous times using just plain white and plain wholemeal (whole wheat) flours and the results are the same as when I've used strong (bread flours).

Basic Wholemeal Bread

You can be pretty brave and mix and match your flours here but I would advise you to keep to 50/50 ratio of white to wholemeal/whole wheat flour for the best results and nice, light crumb.

As with any homemade bread and because of the lack of preservatives it is the best on the day you bake it.

My recommendation would be to eat it fresh on the day you bake it and perhaps the following day and toast it after that. I must say I like to eat my sandwiches toasted anyway so I usually only eat it it fresh when still warm on the day I bake it.

If you don't eat a lot of bread you can easily freeze it. Simply let it cool completely, slice it and pop into freezer safe bag until you need it. To defrost simply take it out onto the kitchen counter where it should thaw in an hour or so, usually less than that. Alternatively, you can simply toast it from frozen until thawed and nicely crisped up.

We love it fresh or toasted for breakfast with the variety of spreads like lemon curd, homemade orange marmalade or this plum and chocolate spread.

For lunch it will make a delicious sandwich with whatever filling you fancy. How about some wild garlic hummus or vegan egg salad? It will also make delicious addition to any soup. Some of my favourites are:
