Healthy Lemon Blueberry Bread (refined Sugar Free)

When it comes to healthy baking, yogurt is your friend. Not only is yogurt an excellent source of calcium, protein, and Vitamin D, it also adds moisture and texture to pancakes, muffins, and more. Additionally, the acidity in yogurt helps activate baking soda, which can make baked goods fluffy and light. You can substitute it for sour cream, mayonnaise, or crème fraîche. Get the same taste but with less guilt!

Whole Wheat Pastry Flour is 100% stone ground from the finest soft white wheat. In addition, it has a lower protein content than regular whole wheat flour, and it makes tender wholegrain baked goods like breads, pie crusts, muffins, and pastries. It retains the nutrients of the bran and germ.

Healthy Yogurt Oat Blueberry Breakfast Cake

I debated calling this a loaf or bread or cake even, but ultimately decided on breakfast bread. I decided the breakfast part is important to emphasize that the ingredients are all nutritious, filling, and won't cause a sugar crash (sweetened with just a touch of honey)!

With a base of oat flour, this bread is *almost* equivalent to a nutritious bowl of oatmeal for breakfast. Except the lemon and blueberry make it feel a lot more springy than a bowl of wintery oatmeal!

Easy Oat Flour Muffins (with Chocolate Chips)

The ingredients in this deliciously healthy recipe are all super simple pantry staples, and you can even use frozen blueberries. So there is a good chance you can make this right. now. (GO!!!!)

As a completely optional step, you can add a simple, one ingredient Sugar Free Frosting to the top of your Healthy Lemon Loaf.

Not to be confused with Coconut Oil, Coconut Butter is like Peanut Butter but from Coconuts. It solidifies when its cold, and liquefies in warmer temperatures. If yours is liquid, you can simply pour it on top. If you are in a cold house, you may need to heat it up or you can mix it up with some warm water to get a good consistency.

While you can get a slice of blueberry bread from the bakery, this breakfast bread version is both incredibly simple and much better for you. The oat flour, banana, honey, and fresh lemon zest add just enough sweetness and heartiness you’d expect from a delicious bowl of oats but by the slice.

Oat Flour Banana Bread {no Butter, One Bowl!}

The best part about quick bread recipes is that they yield 12 standard-sized muffins! All you have to do is line the muffin pan with cupcake liners or grease it, fill each about ¾ of the way to the top, and bake the muffin batter in the preheated oven for 25 minutes.
