Six years ago, I came across a cloud bread recipe, also known as Oopsie Bread. With keto and low carb diets being so popular now, I thought it would be a good time to revisit this recipe. I always like trying low carb bread recipes and this one looked like a good one to try.
Even though they’re made without flour, the texture is extremely light and fluffy, almost cloud-like which is how they got the name. You can tear them like bread and they are sturdy enough to be used to make sandwiches.
Keto Cloud Bread Loaf (high Protein Bread)
I love that they’re low carb and you can make a large batch and store them in the fridge for a few days. You can freeze them, too, and then toast them in the oven or toaster to warm them up. This makes it easy to stay on track if you’re trying to reduce the number of carbs in your diet.
The breads are made up mainly of eggs and cream cheese. The eggs are separated and the whites are whipped with an electric hand mixer until stiff peaks form. This is what gives the bread its structure.
The batter is spooned onto a cookie sheet. I make rounds and can fit about six on a sheet. Then you bake them!

You do need to make these ahead of time. The breads need to sit overnight in a sealed container or ziplock bag before they are to be eaten. This allows them to soften.
This recipe is just four ingredients, so the breads are definitely a little plain. However, you can add different herbs and spices to change the flavor profile.
Low carb cloud bread is definitely something I’ll make again. It’s a good easy substitute for bread and I like that you can flavor it with different seasonings and ingredients.

This easy recipe takesless than 15 minutesto make, and you only need4 ingredients! Just whip up the batter, bake, and cool. Then, you’ll be ready to enjoy your bread.
Looking at the ingredients may give you a hint. All you need is eggs, cream cheese, a dash of salt, and a pinch of cream of tartar.
In fact, if you make 6 total rolls, each one will only have0.6 net carbs! So you can enjoy them as a super low carb snack with a little butter on top, or you can make them part of a bigger meal.
The Best Low Carb Keto Cloud Bread
Wondering what cloud bread keto friendly toppings to try? For a yummy breakfast treat, slather them with someraspberry chia jam. Or for a tasty lunch, top them withketo pizza sauceand some mozzarella for a quick keto pizza!
You can store cloud bread at room temperature or in the refrigerator depending on how soon you plan to eat the rolls.
If you want to keep them in the refrigerator, let them cool and dry at room temperature for at least a day. Then, place them in a container or bag that is not completely sealed.
Keto Bread Recipes That Will Cheer You Up
To store them for longer, you can also freeze them. I like to keep them in freezer bags with two rolls per bag. When I’m ready to use them, I just let them thaw at room temperature.
To keep the bread fresh for up to a week, I recommend storing in the refrigerator. And for the longest storage, freezing is your best option.
As long as you don’t deflate the egg whites too much, cloud bread will be light and airy with a neutral taste.
Oopsie Bread Recipe
Because eggs are a main ingredient, cloud bread does have an eggy taste. However, most people don’t mind it. I find the cream cheese lessens the egg taste.
To add in more flavor, you can fold in your favorite herbs and spices or sprinkle them on top before baking. Garlic powder and onion powder are popular. Some have also added active dry yeast or nutritional yeast to give a more bread-like flavor.
To have the best bread consistency, be very gentle folding the yolk mix into the egg whites. You don’t want the egg whites to break down too much.
Low Carb Cloud Bread That's Delicious!
If you really want thicker cloud bread, you could modify the recipe by adding almond flour. Simply reduce the cream cheese to 2.5 ounces and mix in ¼ cup of almond flour to the egg yolk mixture.
This will add some carbs to the recipe, but the bread will have more texture. This is a good idea if you want to use cloud bread as keto hamburger buns for a big cheeseburger!
Egg bread has actually been around for a long time. I’m pretty sure the original was the Basic Diet Revolution Rolls recipe found in the 1972 version of the Dr. Atkins Diet Revolution book.

The rolls are more bread like when the egg whites are beaten until very stiff. The cream of tartar is preferred to help keep them stiff.
It's not recommended to double the batch as the heavier amount of yolks can flatten the egg whites easily. It's best to use only 3 eggs each time.
For thicker burger buns, reduce the cream cheese to 2.5 ounces and mix in ¼ cup of almond flour to the egg yolk mixture.

Garlic, Rosemary And Parmesan Cloud Bread
Cloud bread tastes like extremely fluffy eggs. It does not taste like bread at all. The flavor profile makes sense since the main ingredient is eggs. They are stiffened and typically combined with cream cheese, cottage cheese or Greek yogurt.
We loved the concept but really ached for something a little more flavorful than the 3 ingredient recipe we tried from Tasty. Our mission became making the very best cloud bread...a savory version that was tastiest enough to be eaten all alone or the perfect stand-in for a bun or pizza base.
Here's a preview of the process to make low-carb cloud bread. Separate 3 eggs. Beat the egg whites with cream of tartar until they are stiff. Combine the egg yolks with ricotta cheese, salt and fresh garlic (or garlic powder.) Gently fold the egg whites into the yolk mixture. Make rounds of batter on a parchment-lined baking sheet using about ¼ cup of batter for each. Bake in a 300 degree F oven for 30 minutes.
