STEP TWO: Place melted butter and light brown sugar in a large bowl and whisk to combine. Add in egg, applesauce, and vanilla. Whisk to combine.

STEP THREE: In a small, separate bowl, use your whisk to blend together the flour, cinnamon, baking powder, baking soda, and salt.

STEP FOUR: Combine wet ingredients and dry ingredients, mixing gently until there are no large lumps of flour left. Do not overmix.

STEP FIVE: Remove excess moisture from shredded zucchini by wrapping in paper towels or a lint-free dish towel and gently squeezing. Being sure not to overmix, add the zucchini to the batter and lightly mix.

STEP SIX: Pour your batter into your prepared loaf pan and transfer to the oven. Bake loaf for 50 to 55 minutes. Your zucchini bread is ready when a toothpick inserted in the center comes out clean.

STEP SEVEN: Allow the loaf to cool in the pan for 10 minutes. Remove from the pan and transfer to a wire rack to cool completely.

STEP EIGHT: Slice zucchini bread, serve, and enjoy. Leftovers will last up to three days in an airtight container in the refrigerator. Slices can be reheated in the microwave for 15 to 20 seconds before enjoying.

There is no need to peel the zucchini since it melts so nicely into this moist bread. That said, it is perfectly ok if you want to!

Yes! Simply grease or line a muffin tin before dividing the batter into the cups. Cook these little treats for about 20 to 25 minutes, using the same toothpick method to test for doneness.

Similarly, you can make smaller loaves by evenly dividing the batter into 2 mini loaf pans and baking for 30 to 35 minutes. You can also use a 9×5 loaf pan instead, but your loaf will not be quite as tall.

First, be sure to use the correct amount of flour by measuring with the spoon and level method. Too much flour will cause your bread to be dry.

To achieve the lightest and fluffiest loaf possible, use both baking soda and baking powder as described in the recipe, and be certain not to overmix.

You can toast and butter this zucchini bread, but you really don’t need to. It’s so good on its own that I find myself snacking on it on all day even if I have cupcakes in the house.

How To Make Zucchini Bread Without Oil (3 Substitutes)

It calls for both brown sugar and white sugar. I like the robust flavor that you get from the brown sugar, but you can replace it with more white sugar if you don’t have it.

I suggest using unsweetened applesauce – smooth or chunky are both fine. If you only have sweetened apple sauce, reduce the sugar in the recipe by 1/4 cup.

This whole recipe only uses 1/4 cup of oil. Applesauce can act as a replacement for the oil or butter in baking. The result is not always desirable in cakes and cookies, but it works perfectly in this bread – keeping it nice and moist without the added fat.

Best Gluten Free Zucchini Bread

The first step is prepping your zucchini. Use a food processor with the the grater blade to grate the zucchini. After it’s grated, use a paper towel to squeeze out the excess moisture. (If you don’t have a food processor, you can use classic grater – it will just take longer.)

Be sure that the zucchini is finely grated. You don’t want to find a big chunk of zucchini in the bread. Double check that the the food processor did its job before adding the zucchini to the batter.

Don’t over-mix. When you fold in the wet ingredients and when you add the zucchini, gently fold. If you over-mix the batter, it can make the bread gummy.

Vegan Zucchini Bread

I use a 9.25″ x 5.25″ loaf pan. Some loaf pans are not quite as wide and deep. If yours is a little smaller (9″ vs 9.25″), you can still use it and you should be fine. If it’s significantly smaller (8″ or less), I suggest filling the pan 3/4 of the way to the top and making muffins with any extra batter.

Store the bread in an airtight container at room temperature for up to three days or in the refrigerator for up to five days. You can also slice it and freeze the slices in an airtight freezer bag. Pull out a slice at a time whenever you want a special treat.
