Yeah! Zucchini is in season! Zucchini is one of summers produce that I always look forward to; there are so many amazing zucchini recipes and this zucchini cheese bread is one of my favourites! Normally when I think about quick breads, including zucchini bread, I think about sweet rather than savoury but this cheddar cheese bread gives those sweet breads a run for their money! Quick breads are super easy to make, you simply mix the wet ingredients together, mix the dry ingredients together, mix the dry into the wet and bake! This is a pretty basic quick bread recipe with the main ingredients being shredded zucchini and plenty of cheddar cheese! I also like to add an herb to the mix and green onions are a great option with others being: chives, parsley, dill, rosemary, thyme, etc. I like to serve slices of this bread warm and topped with melting butter. Yum!
Note: *The zucchini is the source of some of the liquid for this recipe so after you shred the zucchini do not squeeze out or drain off any of it’s liquid. Because zucchini has different amounts of liquid, if your batter ends up being too thick to pour into the pan, feel free to mix in 1-2 tablespoons of milk or water.

Option: Replace the sour cream with buttermilk (or milk) and squeeze as much extra liquid out of the zucchini as you can.
Zucchini Cheese Quick Bread
Option: Sprinkle an additional 1/2 cup shredded cheese on top of the batter before baking to have a nice cheese covered top!
Tip: Use medium sized zucchini with a width/diameter of around 1.5-2 inches or less. (Thicker zucchini have a lot more liquid in them.)

I adore quick breads, and Zucchini Cheddar Cheese Herb Bread just happens to be one of my favorite savory bread variations. The flavors are delicious, and it's a great way to use up all the garden zucchini that arrives this time of year.
Plus it takes under 10 minutes to toss together, and doesn't require a mixer. The insides soft with notes of your favorite beer, cheddar, garlic, and chives. The outside is deliciously crusty from being cooked in butter.
Zucchini Carrot Cake Bread (with Cream Cheese Frosting!)
I've already made two loaves this last week, since it's so easy to make. I'm sure there will be plenty more to come as the temperature drops, and we roll into fall to go with all the soups, stews, and chili's that go with the season.
A little tip: If you have more zucchini than you know what to do with, you can grate it, pre-measure it, and freeze it for later. Just make sure to defrost it before adding it to your favorite Zucchini Bread recipe.
I used an IPA which is a stronger tasting beer. If you aren't a big beer drinker or found of the flavor of beer I would recommend using a light beer which will have a very mild flavor.
Pumpkin Zucchini Bread Recipe

Whether you have a garden or not, you know that zucchini is always abundant in the summer. I’m not a gardener, but many of my friends are, and they have loaded me up with zucchini which seems to be coming out of their ears.
In true Southern Soul style, I used a simple and uncomplicated recipe to make something loaded with flavor using my gifted zucchini.
Savory Zucchini Bread
Zucchini Cheese Quick Bread is tender, easy to make, and downright delicious. What does it taste like? Well, in the words of my soon-to-be daughter-in-law,
To make this zucchini bread recipe, you need to grate the zucchini using a box grater or food processor. You DO NOT need to drain the zucchini.
Nope, there is no need to peel the skin off. Once the grated zucchini is mixed into the batter, it will bake beautifully and become tender.

You can store this bread on the counter or in the fridge. I like to wrap it in parchment and place it in a zip-top bag.

Actually, it serves a triple purpose. Because it’s hidden veggies!!! I use 2 jam packed cups of shredded zucchini (2 medium-large ones). It looks like an enormous mound when you first grate it and you’ll probably be doubting me, but have faith. Once it’s salted then squeezed of excess liquid, it looks like a much more respectable amount. 🙂
