This wonderful keto focaccia is made with modified Fathead dough. It is delicious, very satiating, and a generous square has just 3 grams of net carbs.
It's also very easy to make! With a prep time of 15 minutes and a baking time of another 15 minutes, it's ready fast and requires minimum effort.
Whenever I bake with almond flourfathead dough, I'm amazed at how wonderfully versatile it is. This recipe is a very good example.
Keto Focaccia 🍞
It doesn't taste like the real thing. But it's very very good. When you make bread out of mozzarella, cream cheese, almond flour, an egg, and baking powder, you don't actually expect bread. You expect some kind of an inferior keto substitute. But this is amazingly bread-like and incredibly tasty.
You'll only need a few simple ingredients to make this tasty keto focaccia. The exact measurements are listed in the recipe card below. Here's an overview of what you'll need:
Almond flour: I use blanched finely ground flour. I don't recommend using coarse almond meal in this recipe. It will negatively affect the bread's texture.
Keto Focaccia Bread
Next, add almond flour, baking powder, and egg. Stir the mixture with a rubber spatula, then knead it with your hands. You'll want to work fast, making sure the dough is uniform before it has a chance to cool and harden.
The next step is to press the dough into a greased square baking dish. With your fingertips, make dimples in the dough.
Now scatter the rosemary leaves on top of the bread - gently press on them to make sure they adhere to the dough - and sprinkle it with coarse salt. Then liberally spray it with olive oil.
The Best Keto Bread
The last step is to bake the bread until puffed and golden brown, 15-17 minutes in a 350°F oven. It will smell so good when it's ready!
Make sure to use quality olive oil for topping the bread - it makes a difference. Even if you use olive oil spray like I do, there are better sprays out there that contain extra virgin olive oil and no additives.
As a snack, I like to top it with thin slices of sharp cheese. As an appetizer, I serve it with seasoned extra-virgin olive oil for dipping.

You can also keep it in the fridge, in an airtight container, for 3-4 days. But it keeps fresher in the freezer.

Focaccia, the Italian flatbread par excellence, is one multi-purpose bread if there ever was one. Enjoy it dipped in olive oil and balsamic for a delicious low carb and keto entree, make sandwiches out of it (i.e. panini!), or top with a myriad of options for a pizza-like dish.
And as mentioned, this is not your typical eggy or crumbly keto bread. Think less than half the amount of eggs of your typical recipe, and a few other tips and tricks to ensure killer results.

P.s. this is also a *great* yeast bread recipe for you guys that don’t consume flaxseed nor whey protein isolate (which I use in my sandwich bread and bagel recipes to get a fluffier texture).
Making this paleo and keto focaccia is incredibly simple really. But, like with any yeasted bread, it does require you take care of a few details to ensure the best possible outcome.
And the one thing to keep in mind is that your focaccia will likely fall somewhat post bake, blame it on the lack of starch (keto flours are notoriously heavy and moist) and certain missing proteins (think gluten).
The Best Almond Flour Focaccia Bread Recipe
To hold onto moisture, you’ll find that the exterior is not quite crispy. But if that’s your thing, simply give the slices a light toast post-bake.
The yeast in this keto focaccia ensures a wonderful texture and taste. Now, how much your focaccia will rise (and fall!) post-bake depends quite a bit on your altitude. But note that you still won’t get that gummy and wet texture here of most low carb breads. Plus, I’m baking at over 7, 000 feet (Mexico City!!), so if I can make this keto focaccia work so can you.
Weigh your ingredients. This will forever be a staple recommendation for any sort of gluten free baking here at . As aside from leading to less dirty dishes, it will ensure consistent results time and time again. Remember that gluten free (and particularly keto) baking is notoriously finicky, and measuring by cups is anything but accurate. And if you don’t own a baking scale, measure with cups by dropping the ingredients onto them rather than scooping them out (which often leads to overpacking).
Keto Fathead Focaccia With Olives And Tomatoes
Ingredients at room temperature. Self explanatory really, but incredibly important (particularly for the eggs). If you add cold eggs to the mix your focaccia simply won’t rise much (if at all).
Warm to touch (between 105-110°F to be precise) and maple syrup or honey for 7 minutes until foamy. And before you scream sugar (!!) remember that the yeast will feed on such sugar to emit carbon dioxide, so it doesn’t affect the carb count much (if at all!). And yes, this is a scientific fact.
Avoid abrupt temperature changes and air drafts. Like with any yeast bread, you need to cuddle your dough. Make sure it’s able to rest undisturbed in a warm space.

Baking at high altitude? Yup, so am I (Paola here!!). I’ve tried quite a few combinations, and the one modification I will suggest is to increase your oven temperature by 25°F. You may also need to decrease the baking time by 5 minutes, but that may change from oven to oven. I’ve made this focaccia also at sea level and it does fall a bit less post bake, but it’s still awesome even if it falls a bit so don’t sweat it much.
I like a mixture of super fine almond flour, psyllium husk and xanthan gum best. But if paleo, substituting the xanthan gum for twice the amount of golden flaxseed meal yielded good results too, though slightly denser.
*Before you scream sugar (!!) remember that the yeast will feed on such sugar to emit carbon dioxide, so it doesn’t affect the carb count much (if at all). And yes, this is a scientific fact. Or just buy some inulin (fully keto, but I know most peeps don't have it in their kitchens).

Easy Keto Focaccia With Dipping Sauce
It would have been easy to make a low carb focaccia with fathead dough. You could simply bake my keto garlic bread in a rectangular pan and add rosemary sprigs and salt.
