Healthy

This delicious no yeast bread is about as close to the texture of yeast bread as I have ever made without yeast. It’s a small loaf, about 8-inches in diameter, but it bakes up to a decent height. It’s also nicely sliceable. Though it will never be as sturdy as a yeast bread, it makes a great bread to enjoy eaten out of hand with butter or alongside a pot of soup or stew.

No Yeast Vegan Bread

Butter – butter adds nice flavour to this bread and contributes to the texture of the bread. I haven’t tested this recipe with liquid oil or shortening. Of the two, I suspect shortening would probably be a more successful substitute. 

Buttermilk or Milk – you can use buttermilk or milk in this bread. If you’d like the tangy flavour of buttermilk, but don’t have real buttermilk on hand, you can make your own. Simply add 1 1/2 Tbsp of lemon juice or white vinegar to 1 1/2 cups of regular milk. Stir and let stand 10 minutes before using. I haven’t tested non-dairy milks, but I suspect they would work here.

Mixed seeds – simply make a mix of any seeds you have, such as sunflower seeds, flax seed, sesame seed, poppy seed etc.

Easy Homemade Gluten Free Bread Recipe

The key to this recipe is to add just as much or as much liquid (buttermilk or milk) as you need to create a moist dough – not too sticky/not too dry. Everyone’s flour will absorb liquid differently, depending on your general climate or the climate of your own kitchen, so the amount needed will vary slightly between kitchens. Start by adding about 3/4 of the liquid, then go from there, adding in ver small increments and stirring in between. Watch for dry flour at the bottom of the bowl. That’s a sign you need to add a bit more liquid. Don’t be afraid to go beyond the 1 1/2 cups if your dough needs it.

Multiseed No Knead Bread

Oil - I've improved the recipe by using extra virgin olive oil. You can use avocado oil, coconut oil or whichever you prefer.

Whole wheat flour - works the best for this recipe and I'm combining it with all purpose flour to achieve that soft textured bread with minimal effort.

Honey - I love the hint of sweetness in this bread. Use maple syrup or any other natural liquid sweetener that you like instead.

Quick And Easy No Yeast Bread

Egg - Works the best for this recipe. I've tried it with flax seeds egg but found the bread a bit too crumbly for my taste. If you can't have eggs and don't mind the change of texture, just know that it's doable with flax seeds egg.

Buttermilk - I make my own buttermilk, it's easier than having to buy some, store and not knowing what to do with the balance. My homemade vegan buttermilk also works for this recipe.

Yeast

Having said that, just know that it takes a bit longer to get toasted. And also, be gentle when you're handling the toasted slice as this bread is soft when it's hot.

Hi Erin! Yes, please try again. Swapping flours can affect how much water a bread mixture needs. Also, play around with the type of pan you use. It can make a difference. I’ve been working on some new recipes for the bread machine and you should see how much better the yeast-free loaves bake up. They are incredible! That being said, baking this recipe with steam in a larger oven could also help with the rise. Make sure your oven is nice and hot when you bake the dough. And, the type of plant-based milk you use is important. I suggest homemade hemp milk because it’s only two ingredients, the seeds plus water. But if using store bought brands, make sure they are not filled with gums and other ingredients that could way down the texture to the bread.

Hi Gigi! I’ve personally never tried the yeast-free bread recipe with dairy milk so you might have to experiment. If the raw milk is too creamy you could mix half milk with half water to dilute it a bit.

I would try flax seeds or ground flax first but chia seeds might be oaky too if you like them. Even sesame seeds, if you’re not allergic, could be tasty in this recipe.

Hi! Any kind of homemade plant-based milk will work. Almond, cashew, if you’re not allergic to nuts. Coconut milk might be a little heavy but could be thinned out with water. Seed milks prepared with sunflower seeds, pumpkin seeds, sesame seeds would be great too.
