If you like a Snickerdoodle cookie, you’re going to love this Snickerdoodle bread. It’s a sweet, buttery quick bread studded with luscious cinnamon chips with a crispy cinnamon sugar topping.

One of the breads that I created for the first National Food Bloggers Bake Sale, part of the Great American Bake Sale, is a scrumptious quick bread recipe, Snickerdoodle Bread. It has the tangy sweetness of a Snickerdoodle cookie with a moist, bet-you-can’t-eat-just-one-slice, interior.

The aroma while this bread is baking will draw everyone to the kitchen. But I’ve added another layer of cinnamony goodness by adding cinnamon to the batter and loading it with luscious cinnamon chips. Cinnamon chips are white chocolate chips flavored with cinnamon. They add a burst of flavor and a nice texture to the bread.

Cinnamon chips can sometimes be hard to find in stores, especially in the summer. Grocery stores and Walmart often only carry them in the winter. You can order 3 packages on Amazon for $4 a package.

You can order them directly from Hershey’s online. King Arthur Flour carries mini cinnamon chips. If you live in the Salt Lake City area, Gygi usually has the Hershey’s chips and the mini cinnamon chips.

If you don’t want to order the cinnamon chips and you can’t find them at your local grocery store, people often substitute butterscotch chips for the cinnamon chips in this recipe. You won’t get the extra burst of cinnamon, but the chips add a nice contrasting texture to the bread.

Eggnog Snickerdoodle Quick Bread

Since I originally posted the recipe, I tweaked my Snickerdoodle bread recipe a little bit so the loaves rise even better into the classic quick bread dome shape. Now with the addition of one more egg and a bit more flour, your Snickerdoodle bread will look even more irresistible.

You can also make this in two 9×5 loaf pans. Bake at 350º for 60 to 70 minutes or until a toothpick inserted into a crack in the center of the loaf comes out clean

I love snickerdoodles and anything with a sugary crust. Checking both boxes, this Snickerdoodle Zucchini Bread is an absolute winner in my book. The fact that it makes two loaves is also awesome, so you’ll have plenty to share.

A Snickerdoodle is a type of sugar cookie that is rolled in cinnamon and sugar. Some sources claim that the name is German in origin while others claim that it’s a nonsensical word stemming from a New England tradition of giving cookies unique names.

Not only does this get a little bit of healthy fat into your food, but because it’s naturally sweet, you can reduce the amount of added sugar. (With this recipe, if you choose to use vegetable oil instead of coconut oil, you may want to increase the sugar in the bread by 1/4 a cup.)

And, while this bread is SO good right out of the oven, it’s even better the next day! I’m not sure what exactly is taking place, but the flavors and texture improve overnight!

Using cream of tartar gives the bread a bit lighter/more cake-like texture than using baking powder. It also gives the bread more of a true snickerdoodle taste and your house will absolutely smell like you are baking snickerdoodle cookies!

Next, coat two loaf pans (I used 4 ½“ x 8 ½“ pans) really well with the cooking spray of your choice.

Next, in a separate bowl, whisk together the flour, cinnamon, baking soda, cream of tartar, and salt until everything is well combined.

Snickerdoodle Bread With Cinnamon Ripples

If you do not have coconut oil on hand, you can substitute one cup of coconut oil for one cup of canola oil. If you do this, you may want to increase the sugar to 1 3/4 cup as canola oil does not lend the sweetness that coconut oil does to recipes.

Since these types of bread are my favorite, I decided to do some digging to find more yummy sweet bread recipes to make.

Butterscotch Snickerdoodle Bread

When I got a pack of cinnamon chips in from my Nuts.com order, I started looking to see how I could use these. Over and over again, Snickerdoodle bread kept coming up, so I decided to give it a try.

Cinnamon chips are white chocolate chips flavored with cinnamon. They add a burst of flavor and a nice texture to the bread.

Take the cinnamon chips and coat them with a little bit of flour. Anytime you are cooking with fruit, nuts, or chips like this, always coat with flour. This keeps them from sinking to the bottom of your pies and breads.

Low Carb Snickerdoodle Bread Recipe

Fold in the cinnamon chips. Do not use the mixer to mix them in. They will break up in your bread if you do.

Once you get them folded into the batter, then use either a mini loaf pan or two regular size loaf pans to make the bread.

Bake the bread at 350 degrees for 35-38 minutes for mini loaf pans or for an hour if you are using regular loaf pans. Remove from the oven and allow the bread to cool before slicing.
