An easy, gluten free vegan French bread recipe using the water from chickpea cans (aquafaba) as egg replacers. Crusty on the outside and soft in the middle!

Easily my most popular recipe that I’ve ever shared on A Saucy Kitchen has been for my gluten free French bread recipe. It’s easy, it doesn’t require 50 different types of obscure gluten free flours, and above all it’s just really good!

As in the water that you and I used to pour down the sink when draining a can of chickpeas. As it turns out, this weird bean liquid makes for a fantastic vegan egg substitute.

The Most Delicious And Easy Vegan French Bread Recipe

As a rule of thumb 3 tablespoons of aquafaba is equal to 1 whole egg. However, this can depend on what you’re cooking and the consistency of the water. Ideally you want the water to be thick and a bit slimy – basically like real egg whites. Since the original recipe calls for egg white specifically this is perfect for our recipe!

Just like the original Gluten Free Bread recipe the dough will look pretty wet and unusual compared to regular gluten filled doughs. You will have to spoon the dough into your bread pans so don’t be alarmed that you did something wrong.

Make sure that your yeast is still good before adding it to the dough. If the sugar-water and yeast mixture doesn’t foam that means that either your water wasn’t warm enoughor the yeast is off. Best practice for storing yeast is to keep it in a cool, dark place like the fridge.

Long time readers may recognize this post as I posted it a year ago. However, I lost it after an unfortunate incident last November. Fortunately, I found it again after organizing my old computer folders!

I first learned how to make bread in Grade 8 Home Economics class. Thank you, Vancouver Public School System! That year, I went through a phase when I would make bread every other night for my sandwich the next day. That made for some pretty late nights and I never let the dough rise quite as long as I should have. Made for some very dense loaves. Over the years, I haven’t become more patient. Instead, I come up with other things to do while the bread is rising. In fact, in the first version of this recipe post, the photo I used showed flat loaves that resembled elongated ciabatta buns. That’s because I was too distracted with my other activities that I left the loaves to rise TOO long. If they are left too long to rise, they will eventually fall.

Gluten Free French Bread (baguette)

Be sure to use a very sharp knife to cut slits on the tops of the loaves. The slits allow the loaves to rise evenly.

I haven't posted a non-sourdough bread in a while, so I thought I'd remind you about this amazing and easy French Bread recipe I shared with you all the way back in 2009. It's my favorite French Bread and I make it ever so often, as do so many of you who have written to tell me all about it.

My recipe's still exactly the same, but I've updated this post with new photographs, because the old ones were, well, to put it nicely, dated.

This is an extremely easy bread to make, with two rather quick rises and just 25 minutes in the oven. And it is quite fool-proof. In fact, if you're a new baker, this is the recipe to give you the confidence you might be looking for as a bread baker.

Yes. While you will get an amazing recipe using just water, if for some reason you would prefer to use a vegan milk you could. Use an unflavored, unsweetened version. But honestly, just stick with the water.

We are using instant yeast. You can use active dry yeast but note that it will take longer to proof so you need to make sure that you aren’t moving on until your dough has doubled in size.

Once you have your dough and your bowl is covered, you can place the bowl in the fridge up to 2 days before you plan to use it.

The second option is to make the entire recipe and then you can store in an air tight container for up to 3 days. Just warm to eat.

Make the recipe all the way through rising. Then, once it has doubled in size, you can place in a ziplock bag and place in the freezer for up to 3 months. To use, let set in the fridge overnight until thawed.

Is French Bread Vegan? What About Baguettes?

The second option is to make the entire recipe and then you can store in a freezer safe bag or container for up to 3 months. Thaw out overnight then heat. We do recommend for this method that you wrap them in foil first before placing in a freezer safe bag or container.

The easiest way is to use a lame . A lame is a double-sided blade that is used to slice or slash the tops of bread before being placed into the oven to bake.
