You just have to get your hands on some stale croissants, make a simple syrup and throw together a buttery almond filling. Put those three components together and you have a bakery style almond croissant from the comfort of your own home! Be warned–these are alarmingly easy to make and you might just find yourself making these twice a week….not that that’s a bad thing.
You’ll need just 8 simple ingredients to make these homemade almond croissants. And while some of the ingredients can be a little pricey (looking at you, almond flour), it is still wayyyyyy cheaper to make almond croissants at home than to buy them fresh from a bakery! Here’s your shopping list!

I recommend heating them up before you eat them for best results! You can also freeze these bad boys and pop them in the oven to heat them up so you can almond croissants on demand. If you do freeze them, make sure to let the croissants cool completely before placing in a freezer safe container or plastic bag. These can be kept in the freezer for up to 3 months before they start to taste a little freezer burnt. This Simple & Sweet Almond Croissant Recipe Will Make You Forget The Bakery Croissants
For homemade croissants, you can fill the dough before rolling, fill them fresh from the oven. Cut the croissants in half horizontally, and spread a layer of the almond cream filling on the bottom half of each croissant. Place the top half of the croissant back on and then sprinkle sliced almonds on top of the croissant, and place them on a prepared baking sheet lined with parchment paper. Bake them in the oven until they’re crispy and golden brown. Once they’re done, let them cool on a wire rack for a few minutes before serving.
If you have any leftovers, store them in an airtight container for up to a day. When you’re ready to enjoy them again, place them in a warm place for a few minutes to crisp them up.
Want an almond croissant without the full laminating process? If making your own homemade croissants feels too ambitious, one other option is to simply jazz up some store-bought croissants. You want to start with stale croissants. Either use day-old croissants or toast them in the oven until they’re crispy.
How To Make Almond Croissant Recipe Like A Bakervincenzo's Plate
Here is the timeline I like best for making them and having them ready late morning. My timing is generous as sometimes you need to pop your dough into the freezer if it feels too soft.
Day 1: Start poolish in the evening sometime before bed- cover loosely and let it hang. (I did this around 7 pm.)
10:AM or so- Shape dough into a rectangle- pop in freezer for 20 mins- put butter block into freezer for 20 mins as well.
Almond Croissant French Toast Bake
1:30: Roll out the dough to full size, divide in half. Wrap well in plastic wrap and freeze for 20 mins OR chill in fridge overnight. You can also freeze one half of the dough to make more croissants another day. This is usually what I do, and if I start the dough the next morning they are ready to eat around 11 am.
2:30: If you want to continue shaping the croissants, use one half of dough at a time, roll out, cut, and shape croissants. If you are filling them you’ll do this now as well. Repeat with second batch of dough.
3:00- Two choices: Allow croissants to proof at room temp loosely covered for 2 hours. (Will be ready to eat around 5 pm.) OR cover each tray and pop in the fridge until Day 3 so you can proof them and bake in the morning.

*I hunted down diastatic malt powder to use here but I really don't think it does much besides maybe help the croissants get extra golden. If you can't find, use regular malt powder or skip it.

Easy Twice Baked Almond Croissants
First you make the syrup, then the filling. You assemble by dipping the croissants into the syrup, piping or spreading filling inside, topping with sliced almonds and baking!
Step 1: Combine water, sugar, vanilla, and almond extract in a medium saucepan and bring to a simmer. Stir to dissolve and let cool to room temperature while working on the filling.
Step 2: In a large bowl (or stand mixer or food processor), combine butter, sugar, eggs, salt, and almond extract. Have the butter very soft to make it easier to blend. Blend with an electric mixer or whisk vigorously with a wire whisk.
Almond Croissants (shortcut Recipe)
Step 3: Add almond flour and blend with a mixer or wooden spoon until creamy and mostly smooth. Transfer to a piping bag or a large disposable zippered bag with the end cut off. Skip the piping bag if you'll be filling with a spoon.
Cut croissants in half (like for a sandwich). Dip both halves briefly in the syrup and lay out on a tray or baking sheet.
Step 5: Spread or pipe almond filling onto the bottom halves of the dipped croissants. Distribute evenly and make sure to leave about ¼ cup of filling in the bowl for topping the croissants.

Step 6: Place the top halves over the almond filled bottoms and spread a thin coating of filling on top of each croissant. Generously sprinkle with sliced almonds and press them in gently so they stick.
Step 7: Bake the croissants on a parchment lined baking sheet for 10-12 min, or until bottoms and tops are crisp and golden.

I haven't tried filling croissants with marzipan but it definitely has a similar strong almond flavor. Frangipane does not typically contain marzipan.
Easy Homemade Almond Croissants
I recommend using almond extract because it gives desserts that strong, floral almond flavor. I don't recommend leaving it out - it won't taste like an almond croissant. You can decide if you use natural or artificial almond extract - I prefer the flavor of natural almond extract.
