In fact, some Bajan people I know told me that in Barbados, it is common to eat it with hot sauce. Although it was interesting to find out, I’ll stick to enjoying it with butter, cheese and fruit.

The reason this Trinidad Sweet Bread is often called Coconut Bread is because coconut is the main ingredient that can never be substituted.

Traditionally, it would be made with freshly grated coconut. However, my aunt always made it withdessicatedcoconut, so that’s the way I make it. Being in NYC, dessicatedcoconut was just easier and more convenient than getting a hold of fresh coconuts.

When you purchase the grated coconut, make sure it is drydessicatedcoconut with no added sugar. Do not use the flaked sweetened coconut that many people mistakenly refer to as grated coconut. If you use this, your Sweet Bread will become sickeningly sweet and unpalatable.

Most of the ingredients are staple ingredients you probably already have in the house. The only thing you may not be sure of is the tuttifrutti. This is sold by different names, so I am always unsure what to label it. It is basically a variety of candied peel of various fruit.Soit might also be labelled as candied fruit.

Bajan sweet bread like most other breads is an enriched dough, and contains ingredients like sugar, eggs, milk, and butter to add flavor to the bread.

There are some types of sweet bread such as the Hawaiian and the Portuguese sweet bread that I have tried but some people just like good old grandma fluffy sweet bread recipe.

When I make coconut sweet bread no one refuses, it’s just that good. This richly textured coconut bread is a traditional favourite of all Barbadians and a west Indian delicacy. My friends in St. Lucia love it along with bread rolls.

Sultana And Walnut Loaf Recipe

This traditional Barbados sweet bread is soft but not too soft as it’s also a little crumbly and delightfully eaten sometimes with cheese and served with hot tea; it can be buttered if you prefer.

Melt the butter in a saucepan. In another bowl mix the coconut, the majority of the sugar – leave some back for covering the loaves later, raisins, cherries, eggs, milk, mix essence, nutmeg and melted butter.

Now divide the mixture between the baking tins. you can make a line in center n pace coconut mix with nutmeg n sugar fold back together n place three cherries at the top. Now boil the water. Mix 2 tablespoons of sugar, with some hot water and brush the top of each loaf.
