Banana Bread Recipe Easy With Walnuts

Easy Banana Walnut Bread made with greek yogurt and very simple ingredients. This banana bread is super moist, soft and fluffy with a lovely crispy exterior.

Lately, I’ve been obsessing over banana bread. It is just one of these things that I love having for breakfast and as a dessert. It also makes a perfect snack.

Moist

And when I say obsessing, I mean that I’ve been doubling the quantity and baking 2 loaves at once every single weekend for the past month!

My partner loves banana bread as much as I do, so it made it to all the lunch boxes that we’ve been taking to work with us. We also love this amazing Vegan Chocolate Banana Bread and these mouthwatering Apple Cinnamon Muffins.

I spend one or two days a week cooking (for the blog and for my family). And I do everything else during the 3 or 4 days that are left. So imagine all the meal prep that I have to do to make sure that I don’t spend much time in the kitchen when I should be working in the office. And this banana walnut bread is a real lifesaver! It is the moistest banana bread that I’ve ever had and made, and it’s just perfect for lunch boxes!

You could use a cake pan for this recipe, and make a round banana walnut cake. However, my favourite way to bake this banana bread is in the classic loaf pan . I also love the fact that loaf slices fit perfectly in lunch boxes.

That is due to over mixing. Over Mixing the batter results in a gummy super dense bread. It is enough to lightly incorporate dry ingredients with wet ingredients using a spatula.

Store banana bread wrapped in plastic wrap or in an airtight container on the counter for up 4 days. It actually tastes better on the next day of baking.

There are two ways to do that: The quickest method is placing whole unpeeled bananas on a baking sheet and baking them at 260°F/130°C for about 15 minutes depending on their initial ripeness. The other method is placing them inside a paper bag and leaving them on the kitchen counter for one day (not separated). To speed up the process, add an apple to the paper bag before folding up the top.
