Cauliflower mug bread is a single-serving bread recipe made in mug and cooked in the microwave. You only need 4 ingredients and it’s ready in just a few minutes!

My two favorite types of recipes to create are mug cakes and cauliflower recipes. For the last few weeks, I have been wanting to find out if I could create a shortcut cauliflower recipe in the microwave. And the answer is yes!

This cauliflower mug bread, of course, doesn’t have the exact same texture as bread. It tastes like the cauliflower bread base used in cauliflower bread sticks or cauliflower pizza crust. You don’t need to wring the cauliflower dry, though, and you don’t need to wait forever to bake in the oven. Instead, it cooks in about 2 minutes.

How To Make Perfect Cauliflower Rice

I had so much fun making these. I ended up ricing a bunch of cauliflower and made several of these, bagging the rest for later in the week. I’m so excited to share this recipe with you now!

Riced cauliflower: I like to rice my own cauliflower florets in a food processor. You can use frozen cauliflower rice, but you will need to thaw it and then pat it dry, which adds time.

Egg: You only need a small amount of egg for this cauliflower bread. Whisk a whole egg in a small bowl and then measure out one tablespoon to mix into the batter mixture.

Cornmeal Spoon Bread Recipe

Mix all of the ingredients in a microwave-safe mug. Once mixed, use the spoon to pack the batter into the mug and then smooth the top.

Microwave the mug bread for 1 1/2 minutes. At this point, check on the bread. If the edges are pulling away from the mug and the top look dry, it’s ready. If the batter is still really wet, add up to 30 seconds more of cooking time.

Broccoli - You can also try other types of riced vegetables in this. Riced broccoli works well as do blends of cauliflower rice with other chopped veggies.

Yes, you are welcome to use fresh cauliflower rice if you’d rather. To make it, you will need to cut it into pieces and add it to your food processor. Mix until it resembles rice, and you are good to go. Be sure not to overprocess it, or the texture is going to be off.

How To Make Cauliflower Rice (easy To Store & Freeze)

Sure! You can prepare and bake this cheesy keto cauliflower in advance. After it’s cooled down, place it in a container that has a tight-fitting lid. It typically lasts 4-5 days in the fridge.
