Looking at the ingredients may give you a hint. All you need is eggs, cream cheese, a dash of salt, and a pinch of cream of tartar.
In fact, if you make 6 total rolls, each one will only have0.6 net carbs! So you can enjoy them as a super low carb snack with a little butter on top, or you can make them part of a bigger meal.
Cloud Bread (3 Ingredient Oopsie Bread)

You can store cloud bread at room temperature or in the refrigerator depending on how soon you plan to eat the rolls.
If you want to keep them in the refrigerator, let them cool and dry at room temperature for at least a day. Then, place them in a container or bag that is not completely sealed.
Almond Flour Bread Recipe
To store them for longer, you can also freeze them. I like to keep them in freezer bags with two rolls per bag. When I’m ready to use them, I just let them thaw at room temperature.
To keep the bread fresh for up to a week, I recommend storing in the refrigerator. And for the longest storage, freezing is your best option.
As long as you don’t deflate the egg whites too much, cloud bread will be light and airy with a neutral taste.
Low Carb Cloud Bread With Greek Yogurt
Because eggs are a main ingredient, cloud bread does have an eggy taste. However, most people don’t mind it. I find the cream cheese lessens the egg taste.
To add in more flavor, you can fold in your favorite herbs and spices or sprinkle them on top before baking. Garlic powder and onion powder are popular. Some have also added active dry yeast or nutritional yeast to give a more bread-like flavor.
To have the best bread consistency, be very gentle folding the yolk mix into the egg whites. You don’t want the egg whites to break down too much.
Vegan Keto Bread Recipe
If you really want thicker cloud bread, you could modify the recipe by adding almond flour. Simply reduce the cream cheese to 2.5 ounces and mix in ¼ cup of almond flour to the egg yolk mixture.
This will add some carbs to the recipe, but the bread will have more texture. This is a good idea if you want to use cloud bread as keto hamburger buns for a big cheeseburger!

The rolls are more bread like when the egg whites are beaten until very stiff. The cream of tartar is preferred to help keep them stiff.
It's not recommended to double the batch as the heavier amount of yolks can flatten the egg whites easily. It's best to use only 3 eggs each time.
For thicker burger buns, reduce the cream cheese to 2.5 ounces and mix in ¼ cup of almond flour to the egg yolk mixture.

You may have all ready tried the orginial recipe of cloud bread and wasn't quite thrilled or satisfied with the texture. It does tends to be light and have an airy texture, but eggy and moist and not at all like a piece of regular bread to make a sandwich with.

I had to change the original recipe the first time I made it. That's what I did back in 2016, I first published my adaption to Cloud Bread including whey protein powder to provide a bit more substance.
I removed the traditional cream cheese mixture and used sour cream instead. It produced a fluffy cloud bread recipe like no other!
If you see the use of protein powder in cloud bread anywhere else, you know it was first published by me in 2016, so all others are copycats.
Almond Flour Bread
And this version was so much better then the orginial, but I have been revising and editing and made it even better!
PLACE YOUR EGG WHITESin a stand mixer with the cream of tartar and whipON HIGH SPEEDuntil stiff peaks. This should take about 10-15 minutes. Set aside.

ADDthe egg yolks in a bowl with the remaining ingredients and whisk and stir well to combine. It will be thick but use your muscles to really get those clumps out until the mixture is smooth.
Cloud Bread {keto, Low Carb, 4 Ingredients}
FOLDin a small amount of egg whites into the yolk mixture a little at a time until it's all incorporated. I do this in about 3 batches. I use my spatula to get to the very bottom of the bowl and spoon over the yolk mixture and turn the bowl while continuing to spoon over and gently incorporate the whites.
POUR BATTERinto a generously greased 8 by 4 loaf pan. Place your loaf pan on a small baking sheet pan in case of spill.
BAKEon the middle shelf of oven for 50 minutes or until a toothpick or skewer stick in the center comes out clean. (See notes BELOW if you are making rolls, cooking time changes.)

ALLOWto cool completely. To help prevent some deflating in the center you could lay the pan on its side for 30 minutes then lay on the other side for 30 minutes.
