Today is Easter, this year we all are staying at home, so kids get involved in everything. I decided to make Primorski Uskrsne Bebe/ Croatian Easter Bread Dolls as part of World Easter bread Series. Croatians makes Easter bread Pinca for the Easter basket. With the same dough they make Primorski Uskrsne Bebe/Croatian Easter Bread Dolls.

Croatian Easter bread dolls or primorski uskrsne bebe (literally Easter babies from Primorje) are traditionally made in Primorje and Istria on the Adriatic Coast from pinca.

Croatians makes round sweet Easter bread called pinca to put it into Easter basket and take it to church for the Holy Saturday for blessing. With the same dough they makePrimorski Uskrsne Bebe/ Croatian Easter Bread Dolls for kids. I It basically looks like a swaddled baby. Dyed eggs are the head of baby peeking through the swaddle.
They are prepared with a slightly sweet yeast dough braided around a colored hard-cooked egg, giving the appearance of a swaddled baby. Traditionally eggs are dyed red, however nowadays there are other colors are used to make the Croatian Easter Bread Dolls.
Kids can take part in the various stages of making this Primorski Uskrsne Bebe/ Croatian Easter Bread Dolls. From dying the eggs to making the dough, placing the eggs and finishing the bread with drawing faces on the eggs. I used food color for dying the eggs in this recipe. If you want, you can naturally dye the eggs recipe is here. This recipe is inspired from here, I reduced the amount of recipe and adjusted according to our taste buds. I have added orange zests and vanilla extract also and made 3 bread dolls.
Uskršnja Pogača / Easter Bread
• Use soften butter vs melted butter. You need to combine soften butter into the dough to make brioche kind of dough
• If you are using yeast, use SAF gold yeast as they tend to work better in the presence of sugar. If you don’t have SAF Gold Yeast in hand, try to use slightly more instant yeast to make it work.

What’s great about this recipe is that you can be as creative as you’d like with the dough. The dough itself is very soft, not sticky, and super easy to work with. I decided for this recipe I would incorporate a braid pattern but still make it simple enough so that anyone could make it. And the great thing about dough is if you don’t like the way something turned out you can re-knead the dough and try again :).

When serving this bread, I like to top it with a few Easter eggs or one red Easter egg, which is most traditional. Some recipes for Easter bread say to bake the hardboiled egg with the bread so that is embedded in the design. You can definitely do that or you can place a ball of aluminum foil in the middle and it will keep the shape without having to use the egg.

I’d like to mention that this bread can be eaten year-round and doesn’t necessarily have to be for Easter. I make this recipe often but will either roll all the dough into balls or simply bake it into a round loaf shape with no special decorations.

That is a reason why I love food so much, it’s all the memories and stories we connect we certain foods and just a smell or a process of making it can bring us back in time instantly.
“Pinca”, slightly sweet bread with a hint of lemon and orange zest, traditionally is brought to the Church in the basket (together with eggs) to be blessed by the priest before being eaten for Easter breakfast.
