After sharing my latest no knead bread recipe with you all, I received several messages asking what to do if you don’t have yeast. With yeast being hard to track down right now, I started experimenting in the kitchen to find a simple bread recipe that uses no yeast.

Also known as soda bread, homemade no yeast bread gets its rise from baking soda instead of yeast, resulting in a tight crumb that isn’t light and fluffy. If you want an airy bread, I recommend my easy no knead bread or perfect challah.
Easy No Yeast Bread Recipe (oven/crockpot)
This easy no yeast bread is a convenient solution to your yeast troubles. It has a golden crust and a dense cake crumb that is perfect toasted alongside your morning coffee.
The flavor is what makes this no yeast bread stand out. Usually, this kind of bread is made with only 4 ingredients: flour, baking soda, salt, and buttermilk. In my research, I read in Cook’s Illustrated that they added sugar and butter to give extra flavor to the bread. I tried this out in my own recipe and haven’t left it out since.
For a homemade bread recipe with no yeast, you don’t need to worry about preheating a Dutch oven, turning on your mixer, or wondering if the dough proofed enough. Simply preheat your oven and line a regular baking sheet to get things ready before you mix your dough.
No Yeast Bread Recipe (6 Ingredients)
In a large bowl, whisk together the dry ingredients until well combined. Add in the butter with your fingers (you can also use a fork/spatula) until evenly distributed. Add in the buttermilk and mix until a shaggy, slightly moist dough forms.
If the dough is too crumbly, you may need to add more buttermilk but be careful not to overdo it. Turn out the shaggy dough and any flour crumbles onto a floured surface and knead gently until a cohesive ball forms. It won’t look pretty and smooth like a yeasted dough, but instead will be lumpy and shaggy.
Form the rounded dough into a 7-inch loaf and transfer to your baking sheet. Score a deep “X” into the top with a knife to and sprinkle with optional rolled oats. Bake until golden brown, about 40-45 minutes, or until the internal temperature reads 180ºF. Transfer to a wire rack and cool to room temperature.
Soft Sourdough French Bread Without Yeast!
This quick and easy no yeast bread is a wonderful bread to make if you don’t have yeast or don’t want to wait for bread to rise. It’s a non-fussy, simple homemade bread recipe that has a perfect crust and dense crumb that’s great topped with Nutella (my preference) or warm butter.There is nothing like the smell of warm homemade bread that has just come out of the oven. It has a happy, cozy feeling attached to it. Which I think we could all use more of.

Quick Honey And Beer Bread Recipe (no Yeast)
Make sure your baking powder is still active! To test it, add a teaspoon of baking powder to a bowl, then pour ½ cup of very hot water over it. If it bubbles heavily, the baking powder is good to go! If not, open a new can of baking powder or make a DIY version if you're in a pinch!
The best part of this bread is how easy it is to make! With no yeast, there is no need to let the bread rise, and there is very little kneading necessary.
If you'd like to prep a few loaves ahead of time, you can freeze this bread dough for up to 3 months. Form into a disc, then wrap the dough in plastic wrap and place in an airtight freezer bag or container.
Yeast Free Gluten Free Bread For Sandwiches
Because homemade bread does not contain preservatives, it won't last very long if left on the counter at room temperature. I typically only leave my bread out for a day. After that, store in the fridge or freezer.

Note that the bread won't be very crusty after the first day. You can stick the loaf back in the oven at 350 degrees Fahrenheit for about 10 minutes to get that crusty top back.

This no yeast bread is inspired by the Australian Damper, a traditional bushman’s bread made with flour and water that was cooked over campfires.
Except I’ve brought it into the 21st century to make the crumb fluffier, more tender and tastier, and made it look like sandwich bread rather than a freeform loaf. (Oh, and we cook this in an oven instead of over fire!)
Air Fryer No Knead Bread
This is THE emergency bread that you make when you don’t have yeast, or you don’t have time to make yeast bread.It has a proper crumb like real bread, rather than being crumbly like muffins which many no-yeast breads are. It’s mixed in a bowl with a wooden spoon – no kneading, no rising. You’ll have this in the oven in mere minutes!
In a way that bread made without yeast will never have. But this is as darn close as you will get to a yeast bread recipe

Bread lovers might recognise this as a simplerversion of Irish Soda Bread. It’s easier because the dough is just mixed up in a bowl (ie no kneading at all) and it doesn’t require buttermilk or baking soda which aren’t pantry staples for everyone.
Quick Tomato Bread
This is just like making your favourite Chocolate Chip Muffins! Mix the dry ingredients, then add the oil and milk. Mix, pour, bake!
Why use a loaf pan?Because the mixture is a very thick batter rather than a kneadable dough (like Friday’s pizza dough or focaccia). So you can’t freeform it like Irish Soda Bread. If you don’t have a loaf pan, make it in a muffin tin – well greased, 20 minutes at 180°C/350°F.
It takes 50 minutes in the oven, so I like to do half the time uncovered to get a lovely golden brown crust, then I cover it the rest of the time (otherwise the crust gets a bit thick and dark).

TIP: Let it cool completely before slicing, otherwise it will besusceptible tocrumbling on the edges. On Day 2, it slices 100% perfectly!
Slice it up like normal bread then use it for anything and everything you ordinarily use sandwich bread for. A simple ham sandwich. Or an epic Pastrami orReuben sandwich. Grilled cheese – or cheesy GARLIC bread. Toast it and slather with jam, Vegemite, peanut butter or whatever you heart desires.

Of Our Best Quick Bread Recipes (no Yeast Required)
As with all homemade breads, this no yeast bread is at its best on the day it’s made. But even the day after, it’s still very, very good thanks to the touch of oil which keeps the crumb moist. Then on Day 3, a light toasting is all that’s needed to resurrect it.
It also freezes 100% perfectly – which is what I’ve done with the 8+ loaves I’ve made in the past few weeks, trying to nail the recipe. I’m going to be eating this for weeks and weeks – no complaints here!!
