If so, that’s wonderful.  I love baking.  And while I’m a little frustrated I can’t find these two essential baking ingredients, I’m still glad so many people are doing it 🙂

That said, I really wanted to make bread this week (you know, ‘cause I have lots of free time these days).  With no yeast, I figured a 

Yeast

 would be the solution.  Quick-breads usually don’t require kneading or rising, and the leavening agent is typically baking soda or baking powder.  If you’ve ever made them, you know they’re not airy and chewy, like yeast-based breads.  They’re usually more dense.  But in a pinch, they’re delicious.

If you find yourself in the same boat, have you considered an alternate flour?  Spelt is one of my go-to options.  It’s one of those ‘ancient grains’ you’ve probably heard about, like amaranth, bulgar, millet, barley, quinoa, etc., and it’s a close relative to the wheat family (which means it’s not gluten-free, so stay away if you have issues with that).  You can always find it at health food stores, but it has been showing up at supermarkets.  These days, you might just see some lonely bags of it on those shelves, next to the vast, empty spaces reserved for more ‘recognizable’ flours.

I used the recipe from Honey & Oats (Jennifer Katzinger), a low-sugar option with no eggs (but it does require a little kneading, just to tighten up the dough).  It comes together quickly and takes 50 minutes to bake, resulting in a rustic-looking bread with crunchy edges and a tender crumb — perfect for when a bread craving strikes. I especially like a slice of it after it has cooled from the oven, slathered with salted butter.  It also makes great toast.

So, if you find yourself coming up short on flour and the only option on the store shelf is spelt, I hope you give it a try.  And be sure to have some salted butter on hand 🙂

High Protein Spelt Vegan Soda Bread

There are also lots of yeast-based recipes out there using spelt flour, which will achieve that more 'traditional' chewy, soft bread texture.  Regular readers will know I love my bread machine. I’ve even got a section on my blog for bread machine recipes . I hate kneading, you see, and a bread machine takes all that pesky stickiness and hard work out of the equation. The only drawback is that is is a long process. Sometimes you don’t want to wait hours for your bread fix.

I woke up one Sunday and really fancied a nice bit of bread and a boiled egg for brunch. The only thing on offer was mass-produced white sliced bread tucked away in the freezer for emergencies. I remembered watching a Jamie Oliver video about him making soda bread. No yeast, he’d said. Quick to make. And no kneading. Yes, it sound exactly what I was looking for.

Soda bread has its modern day roots in Ireland (but was first eaten by native Americans), and history says that it first made an appearance in the 1830s. It’s apparently traditionally eaten around St Patrick’s Day, although I didn’t know that. Who cares though? Bread as simple and yummy as this should be eaten any time, surely?

Quick Spelt Bread

I looked around at a few recipes and this spelt soda bread is a kind of mishmash of everyone else’s. It’s not traditional. Of course spelt flour (both wholemeal and white) needed to factor in the equation. I also decided to throw in some chia seeds because, well, why not?

I can’t tell you how easy and quick this was. It looked rustic (part of its undeniable charm) and tasted so good. It also rose higher than I’d expected, too. With no yeast or eggs, I wasn’t expecting a great rise, but that’s what I got.

I used a skillet because I love them. You don’t have to. A flat baking tray is all you need to make this. I did use a mixture of Greek yoghurt and milk as the liquid, but I’ve seen buttermilk in many recipes. I am sure you could get away with just milk, too. It feels like an easy-go-lucky kind of bread, if you ask me.

So, the end result? Did less time in the making result in less taste in the bread? Hell, no. It tasted amazing. Slightly dense but no more so than my other wholemeal breads. The chia seeds added a depth of flavour, but I am not sure it needed them.

I was seriously blown away by how quick and easy this was to make. Since making my first loaf, I’ve whipped up several more versions, each one just as good as the first. It’s great toasted, too. Check out my sweet version with cinnamon and raisins:

The Best Spelt Bread Recipe — Eatwell101

Step 1: Grease and line a 9 x 5 (or similar) loaf pan. This USA Pan Loaf Pan is my personal favourite.

Step 3: Add all of the wet ingredients to another bowl and stir them up (it starts off looking white because the molasses sinks, then turns orange once it's all mixed together).

Simple

Cook the spelt bread as per the instructions and cool it thoroughly on a cooling rack. Wrap well or place in an airtight freezer-safe container or freezer bag and freeze for up to 3 months.

Buttermilk Soaked Rye And Spelt Soda Bread Recipe

Allow to defrost at room temperature on a cooling rack so it doesn't get damp. Eat as it is or reheat it in a warm oven. 350°F (175°C) for about 20 minutes should do it. You don't need to put it in a pan. Just sit it straight on the oven shelf.
