Apple Fritter Monkey Bread Recipe

Today’s recipe is one I developed for Red Star Yeast to share on their website. I love making yeast breads and sweet rolls this time of year. The smell of cinnamon bread baking is intoxicating.

For years my mom made Monkey Bread on Christmas morning. She put it together the night before, so it was ready to pop in the oven Christmas morning. Overnight

This year’s version, Overnight Apple Fritter Monkey Bread, may be my favorite yet.I added caramelized apples to the dough to create an apple fritter monkey bread. You caramelize the apples before adding them to the dough, so they’re sweet and tender.

Monkey Bread is also known as Bubble Bread or Pull Apart Bread. It’s irresistible little bites of sweet, cinnamon bread kind of like getting the best part of a cinnamon roll, the ooey, gooey middle in every bite.

Tip: Heat up your dryer for five minutes, turn it off and put your bundt pan inside the dryer for faster raising.

Monkey bread, also known as monkey puzzle bread, monkey brains, sticky bread, Hungarian coffee cake, and a few more names that I can’t remember right now, is definitely a popular treat in my house, and it is so easy to make and eat! This Apple Fritter Monkey Bread is made with store-bought biscuits, so it’s easy to put together and start pulling apart to enjoy! For another apple fritter treat, try my Apple Fritter Bread.

There are three parts to this recipe that come together so sweetly and deliciously–the apple mixture, the bread mixture, and the glaze.

Apples: I used Granny Smith apples for the recipe because they remain firm when baking. They won’t turn to mush and they tend to retain their shape when baked. A few other options you could try would be Honeycrisp apples, Braeburn, Fuji, or Pink Lady apples.

Biscuits: Look for the flaky variety of buttermilk biscuits. Or, you could also use Rhodes Rolls (like I did in my Orange Monkey Bread recipe).

Generally, monkey bread is made in a bundt pan. But, you can definitely use a different type of pan to get the same delicious Apple Fritter Monkey Bread. You could use a casserole pan. But, the cooking times could vary when you are using a different pan. Be sure to check the middle of the bread for doneness. A bread pan or springform pan would also work.

Yes! This recipe is easy to put together the day ahead of baking. Simply follow all of the instructions up to placing the bread into the oven. Cover the rolls and store them in the refrigerator until the next day. Then, bake the bread when you are ready.

Store the baked bread in the refrigerator, covered, for up to 2 days. When ready to enjoy, simply pop it in the microwave to warm it up.

I first shared this recipe in the fall of 2020, and it quickly became a reader favorite. I can understand why! What’s not to love about warm, soft dough topped with bits of fresh apple and a sweet glaze?

Apple Cinnamon Monkey Bread

The best of both worlds, apple fritter monkey bread, is great for a quick breakfast or brunch. And it makes the perfect sweet treat at the end of a meal.

To begin, preheat the oven to 350℉. While the oven preheats, generously grease a bundt pan with butter or cooking spray. Then, peel, core, and dice the apples into 1/4 inch pieces. I used Fuji apples for this recipe, but you can use any apple you like, such as Gala, Pink Lady, or Granny Smith.

Put the diced apples in a medium-sized mixing bowl and toss them with lemon juice to prevent the apples from browning. Then sprinkle them with two tablespoons of granulated sugar and one teaspoon of ground cinnamon.

Tasty Dishes In Less Time

Add the apple mixture to a skillet with one tablespoon of butter and saute over medium heat until the apples are soft and cooked through.

Next, combine the granulated sugar and cinnamon in a small bowl and mix well. Gently drop the pieces of dough into the bowl and cover each piece with the cinnamon-sugar mixture. Alternate between adding layers of the diced apple and dough pieces in the bundt pan.

Then, in a small saucepan, add one cup unsalted butter, 1/2 cup brown sugar, and 1/2 cup of the remaining cinnamon-sugar mixture. Stir gently and bring to a boil. Once the sugar has dissolved, drizzle the sauce over the bundt pan.

Simple Apple Fritter Monkey Bread

Carefully remove the pan from the oven and allow the monkey bread to rest for approximately 5 minutes. Then, invert the bundt pan onto a large plate.

To make the glaze, mix one cup of powdered sugar with 1-2 tablespoons of milk and 1/4 teaspoon of vanilla extract. Drizzle over the monkey bread and serve warm.

Leftovers are not likely. But, on the off chance that it doesn’t get devoured immediately, place the extra monkey bread in an airtight container and refrigerate.
