Breakfast Apple Bread Recipe

This cinnamon swirl apple bread will give you all the fall feels. Chock-full of tart apples, it has a generous cinnamon swirl running through the center and a crisp sugared top. Similar to other fall quick breads, like pumpkin or cranberry nut, it’s easy to throw together – and it’s really just a cake baked in a loaf pan. My kids claim I ruin everything with nuts, so I’ve intentionally left this apple bread nut-free, but I think a handful of walnuts or pecans would be delicious mixed into the batter. Be sure to wait until the bread is completely cool before slicing; you can even let it cool overnight, as it keeps moist for days. Thank you to Caitlyn over at Erhardts Eat for the recipe inspiration!

With the mixer on low, gradually add the melted butter followed by the milk and vanilla, and mix just until evenly combined.

Cinnamon

Line the long side of the pan with a parchment paper “sling” and spray lightly with nonstick cooking spray again. Spoon about 2/3 of the batter into the prepared pan.

Using a butter knife, swirl the layers by making a zig-zag motion through the batter once in each direction (don’t overdo it!)

Bake for 50 to 55 minutes, until the bread is golden brown and a cake tester or toothpick inserted into the center comes out clean. Let the bread cool on a rack for about 30 minutes.

My go-to baked good (aside from homemade sourdough bread!) is a simple quick bread: banana bread, pumpkin bread, the everyday staples. This Apple Oatmeal Quick Bread is the latest favorite.

Though the warming spices and flavors are well-suited for the fall and winter months, it is perfectly delicious and acceptable all year long.

Festive Cinnamon Apple Breakfast Bread

My version is easier to throw together, offers a more delicate, cake-like crumb (thanks to the addition of whole wheat pastry flour), and uses everyday staples.

Sometimes all it takes is baking up a delicious quick bread – one filled with oats, chopped apple pieces, toasted walnuts, and dusted with crunchy turbinado sugar – to brighten your day.

Baking Tip:Whole wheat pastry flour is my favorite whole grain baking flour due to itslower protein percentage. Low protein flours are preferable for baked goods, such as quick breads, muffins, cakes, and pancakes, that don’t benefit from increased gluten development. Flour Substitution Tip:If you can’t find or don’t wish to purchase whole wheat pastry flour, feel free to substitute with equal parts (preferably, by weight) unbleached all-purpose flour.

Allow the quick bread to cool completely and store in a large Ziploc bag at room temperature for up to 3 to 4 days. To prevent gumminess on the surface (this occurs due to moisture escaping baked goods) set a paper towel on the top to absorb any moisture.

Though I haven’t tested this, I see no reason why this quick bread couldn’t be frozen for later (wrap tightly in plastic wrap than a layer of foil or sealed Ziploc bag). Thaw at room temperature before serving.

Apple

A simple apple quick bread recipe, prepared with whole wheat pastry flour, and studded with rolled oats, chopped apple, and toasted walnuts. Though this quick bread is great the day of baking, slightly warm out of the oven, I actually prefer the texture and flavor on the second day.

Just like my other flourless bread recipes, the batter for this bread is mixed in the blender (this is a no-stir recipe, friends). The blender is a must because the oats need to be well blended with all of the other wet and dry ingredients to get that great texture once the bread bakes.
