Cloud Bread! A low carb, low calorie, keto, gluten free, grain free sandwich bread option for people on special diets. This recipe is so healthy, easy to make, and fun to eat!
Cloud bread apparently was all the rage on TikTok last year. I must have gotten on the app after that trend because I didn’t see it, but my understanding is that bread was sweet and colorful – more like a meringue or pavlova – whereas this cloud bread recipe I’m sharing today is savory, not made with sugar or food dye. It’s really healthy and easy to make for anyone craving bread, but on a keto diet. It pairs well with my cloud eggs!

Cloud bread (also known as Oopsie Bread) is another type of bread, but made with only 4 ingredients and one of them is

Flour. It’s high protein, gluten free, low carb (with only 1 carb per slice), low calorie, and keto friendly, making it a great option for anyone with dietary restrictions.
This bread dates back to the 1970’s when the Atkins diet was introduced. The texture is light and airy, resembling more of an omelette or soufflé then a slice of bread, but is quite versatile in flavor (with the ability to add different seasonings), and uses beyond sandwiches (think pizza or a dipper for soup!)
The traditional way of making cloud bread is by combining egg yolks and cream cheese, beating egg whites to stiff peaks, and folding the two mixtures together. The batter is formed into mounds and baked at a low temperature of 300 degrees F for 25-30 minutes. When they first come out of the oven, each “slice” will be delicate like a soufflé, but after a couple hours the texture becomes sturdier and more like bread.
Is Tiktok Cloud Bread Worth The Effort?
Cloud bread is light, airy, and a little squishy. At its basic level, it doesn’t have much flavor, so just by adding a few dried spices, fresh herbs, or grated cheese can make all the difference.
This is not regular white sandwich bread, so let’s not pretend it is. But it is a fair replacement if you’re on ketosis, craving a sandwich, and want something other than lettuce to bookend your sliced ham. Here are some ways to enjoy it:

Like feta pasta and Dalgona coffee, cloud bread made its way into our lives by way of TikTok. Despite its name, the super fluffy bread is not bread at all, but a baked meringue that gets its soft, cloud-like texture from whipped egg whites.

This version of cloud bread also utilizes a meringue to create an airy texture, but serves as a savory alternative to bread. It's made using just a few simple ingredients—eggs, cream cheese, and cream of tartar—but when mixed up in just the right way and baked in a low heat oven, you get pillowy, bread-like rounds that are gluten-free and keto-friendly.
Bakers know the power of cream of tartar—it's an essential ingredient in meringue toppings for pies, chewy snickerdoodles, and so much more. But what exactly does this powdery white substance do here? When it comes to cloud bread, cream of tartar helps stabilize the egg whites as they whip and speeds up the foaming, resulting in a tall and glossy meringue.
Use them like you would a slice of bread or roll: eating as a side dish, topping like toast, or using to sandwich deli meat. You'll be surprised how delicious a no-grain cloud bread can be, especially when they're as airy and savory as this.

This cloud bread was so easy to make and came out perfectly light and airy. The cream cheese gives it a tangy, savory flavor that makes it pretty delicious to eat on its own. I made half a batch on parchment paper and the other half on a silicone baking mat and found that the ones on the mat held their shape better. If you want yours perfectly round, I'd definitely recommend using a mat. —Patty Lee

This super fluffy cloud bread is so jiggly and cute! It’s no wonder that this bread is a trend on TikTok. This recipe is so easy, it’s just egg whites, cornstarch, and sugar all whipped up and baked. Food coloring is optional, but of course, you can make it in tons of different colors for fun!
Ingredient Cloud Bread (no Flour, Butter Or Oil)
Separate the egg yolks and egg whites. For this, you want only the egg whites in the mixing bowl. Whisk the eggs until they become frothy and bubbly.
The reason why you must have an electric mixer is that you need the speed of the whisk or mixers to be high enough for the egg whites to form bubbles, which simply can’t be done by hand. Add in the rest of the ingredients and whisk until stiff peaks form.

Separate the mixture in half and use a couple drops of food coloring to make the bread colorful. Gently fold the food coloring into the dough using a spatula.

Form the dough into 2 domes on the prepared baking sheet. Use the spatula to round out the domes, and let them sit for 5-10 minutes. Bake the bread in the oven until the outside is slightly golden or has a golden hue if using food coloring.
There are two ways to serve this: cutting the parchment around the cloud bread and serving each person their own OR lifting it from the bottom and serving.
You can slice it if you like, or cut it in half to serve. Or, simply form into smaller domes before baking so each bread is its own serving. It’s recommended not to eat it with your hands because of the sticky texture! It’s best to use a fork or spoon to eat.
