Homemade bread is one of my favorite things to make. It can seem a bit intimidating at first, but this easy french bread recipe is a great place to start. The actual time you’ll be working will only be about 15 minutes, the rest of the time will be patiently waiting for the dough to rest/rise. I absolutely love making bread and rolls of all kinds. There’s something so satisfying about making them in your own kitchen. The smell is unbelievable. We love to serve this homemade french bread with softened butter, honey and/or jam. So so good. Trust me when I say, this is the best french bread recipe!

Since this recipe makes two loaves, sometimes we freeze one of them for later. To freeze, wrap the bread tightly in foil or saran wrap (make sure it has cooled completely). Then place in a zip top bag and store in the freezer for up to 2 months.

Crispy crust: I prefer a soft crust, but for a crispier/shinier crust, brush 1 egg white (whisked) with a teaspoon of water before baking french bread loaf. You can also add a few ice cubes into the oven to help trap the steam and add a few minutes onto the cooking time.

Quick And Easy Homemade French Bread

This recipe makes one nice size loaf or two smaller loaves. I usually make two. We enjoy one and I give the other one away. The dough is mixed up with a bread hook in your Kitchen aid or other mixer of choice.

Then I just leave it in the bowl, cover it with a towel and let it rise until doubled – about 20 minutes or so depending on how warm my kitchen is. It’s pretty fast.

At this point if I am in a generous, sharing mood I will divide the dough into two pieces so that I can make two loaves. If I’m not in a generous mood I roll it out in one big piece using my rolling pin.

French Bread Recipe Super Easy Quick Yeast Bread Fast

Be sure and flour your counter enough so that the dough doesn’t stick. Then roll it up jellyroll style and place the seam side down.

With a sharp knife cut three slits into the bread. Be sure and only go about 1/4 inch deep. If you go too deep your bread may look a little funny after it rises the second time. (Ask me how I know this!)

Give the bread a nice little bath in an egg white wash (just add 1 Tbsp water to 1 egg white and mix together) Heat up a pan of water on the stove until it boils. Have your oven preheated to 300 degrees and TURN OFF. Then place the pan of boiling water onto the lower rack of your oven and place your loaf of bread on the rack above. Allow the bread to rise until double (about 20 minutes or so).

Please excuse my dirty oven. The steam that is given off from the water helps the loaf get that nice crust that a loaf of French bread has. Remove the pan of water from the oven and turn the oven onto 425 degrees. Bake bread for 10 minutes and then turn heat down to 375 degrees and bake for another 8 minutes or until golden brown.

After forming the loaves, let them rise, covered on the baking sheet for 15-20 minutes. Preheat oven to 375 degrees F. Brush top of bread with egg wash or olive oil (you won’t get as golden a color with olive oil), sprinkle with coarse salt. Bake for 20-25 minutes or until golden brown.

It freezes great, just be sure to cool it completely and wrap up air tight. It will keep in the freezer for 1-2 months.

Rapid rise yeast will work fine. I use the same amount as I do of active dry yeast. Just add the rapid rise yeast directly in with the flour, no need to add it to the warm water first.

If you want to use whole wheat flour, I recommend using half whole wheat and half white flour. I always use a white whole wheat flour.

The most important part of this dough (and other yeast doughs) is to judge the amount of flour by the look and feel of the dough rather than the exact amount of flour called for in the recipe.

Factors such as humidity, elevation, room temperature, how we each measure flour, and more can affect the amount of flour added. So don’t stress about precise flour measurements and continuously feel the dough to achieve a soft dough that is slightly tacky but doesn’t leave a lot of residue on your fingers.

Too little flour and the dough will be a mess to handle. Additionally, the bread won’t hold its shape as it rises and bakes.
