German Sauerkraut Bread Recipe

The recipe includes sauerkraut in the bread dough. Yes, I know cooking sauerkraut kills the probiotics. The sauerkraut provides an amazing flavor to the finished bread.

The flavor is not so strong, however; that someone will instantly know sauerkraut is in the bread if they weren’t told ahead of time.

I used a raw, refrigerated sauerkraut made by a local Hutterite colony in this recipe. I’m sure any homemade or other refrigerated sauerkraut would work. The canned variety would also likely work but it’s never been my favorite for flavor.

Do drain and chop the sauerkraut before adding it to the bread dough. Too much extra brine is likely to through off the flour to water ratio and be quite salty.

I used a medium rye flour in the recipe. Simply because that was what I had on hand. Dark or light rye would also likely work. Even pumpernickel would probably work – but beware that you might need more or less bread flour because of how water is absorbed.

However, you could easily skip the seeds all together or use just one based on preference. There’s really no right or wrong here.

Original German Sauerkraut Recipe

This recipe uses the sponge method of allowing the whole grain flour, some water, and yeast sit for a while before proceeding. In this case, the sponge needs to ferment for 3 1/2 hours.

This makes the time to make this bread obviously quite long. This isn’t very difficult and it’s hands on time but don’t rush it. This pre-ferment of the sponge gives extra flavor and texture to the final loaf.

I went for round loaves here just because it was what I fancied. Feel free to bake in loaf pans if desired.

This bread is ideal for homemade Reuben sandwiches. It’s just an extra layer of flavor that makes everything pop quite well. We’ve used it for everything from tuna sandwiches to grilled cheese in our home with great success.

I wouldn’t use it for a peanut butter and jelly sandwich or french toast but definitely recommend it for any of strong, savory sandwich filling.

For longer term storage, wrapped the cooled loaf in plastic wrap and freeze. Sauerkraut Rye Bread is my recipe of the day with the blogging group Sunday Funday. We group together each Sunday to share recipes on common topics. This week we are doing Oktoberfest recipes.

I took inspiration for today’s recipe from some bread we got at Cincinnati’s Breadsmith bakery last year. It was so good! I’d been wanting to try my hand at making a loaf ever since. Now that it’s sauerkraut season, I finally got around to it.

It’s also Oktoberfest season, with the big event in Bavaria, Germany held from mid September through the first weekend of October. Oktoberfest Zinzinnati claims to be the biggest such celebration in the US, and happens this weekend. This bread would be right at home at either. Or for any similar seasonal festival.

This is delicious simply toasted with butter. But also makes a terrific Reuben sandwich. I do hope you try it. And enjoy the wonderful aroma it fills your kitchen with as it bakes!

I am so tickled to be sharing some warming classic comfort foods with you all! Don’t get me wrong, summer is great and all, but the crisp cool days of autumn are always a welcomed change, not only to the weather but to our menu, too.

I am also excited to be sharing a recipe using Frank’s Bavarian Style Kraut. This slightly sweet sauerkraut is made with caraway seeds – and I found it a perfect addition to the Amish Sauerkraut Bread I have made for years.

If you have followed along with me for long, you are sure to know how much we love our Frank’s Kraut! I grew up on it, and it’s the only sauerkraut I buy. I will admit, that I don’t typically purchase the sweet kind, basically because I am a shameless creature of habit, but when Frank’s asked me to do a recipe with their Sweet Bavarian Kraut, I knew exactly what I wanted to make!

The slight sweetness and the added caraway seeds of the Bavarian Kraut was the perfect twist for the basic sauerkraut quick bread. It already contains caraway seeds and has a bit of brown sugar, too.

Adding the Everything Bagel Seasoning was brilliant, as it only added to the caraway flavor, plus a whole new dimension of flavor with “everything” else it has going on. I mean Everything Bagels are without a doubt my favorite of all bagels, so I knew it would be perfect with this kraut bread.

Adding in some garlic, onion, toasted sesame seeds and poppy seeds gave this bread a fantastic flavor, and a nice crunch on the topside.

Simple Bavarian Sauerkraut Recipe Where Is My Spoon

Step One: Pour warm water in a mixing bowl, sprinkle yeast in, stir until dissolved. Stir in potato flakes, salt, brown sugar, oil, and Frank’s Kraut.

Step Two: Gradually add in flour and stir until a stiff dough forms. Using the dough hook of your stand mixer, knead the dough for 4 minutes. Cover and let rise for about an hour. The dough will double in size.

Step Three: Grease a 9×5 loaf pan with Crisco. Punch the dough down and form into a loaf, place in the prepared loaf pan, and cover and let rise for another hour until it has doubled in size again.

Step Four: Bake for 50 minutes, or until bread is golden brown and set in the center. Let rest in the pan for a few minutes before transferring to a wire rack to cool before slicing.

If you don't have a dough hook, you can knead by hand on a lightly floured surface for the same amount of time.
