Bread is a staple in a lot of households, except for those who have specific dietary needs that make it a pantry no-no. This recipe crosses out a lot of those dietary restrictions that hinder you from simply enjoying a slice of heavenly bread anytime you want it! Plus, it’s super quick and easy to make because all you need is one bowl, no yeast, and a maximum of 5 minutes of work time!

This keto bread is made using 8 ingredients that swap out the dairy milk, wheat/grain flour, and eggs to healthy plant-based ingredients that are low in carbohydrates, packed with fibers, loaded with nutrients, and naturally gluten-free! You will be pleasantly surprised and sufficiently impressed with the outcome – a golden crunchy crust topped with sunflower seeds to add more texture and flavor, while the inside remains tender, moist, and chewy for days!

Super Easy Keto Bread

Before I transitioned into a plant-based diet, I have tried a lot of gluten-free low-carb bread recipes that I really like. I tried to veganize them so I can still munch on bread to my heart’s content. However, the vegan version of my old recipes was not up to standard. So I looked around and tried other recipes and came across Sweet as Honey’s Eggless Vegan Keto Bread Loaf and I like it the best! Since a lot of you have been asking me to share one, I used it as my inspiration to create my very own guiltless vegan bread! So let’s get started! 🙂

Start by adding the almond flour, coconut flour, ground flaxseeds, psyllium husk, baking powder, and salt to a large bowl and whisk together. Next, add the canola oil, water, and apple cider vinegar and mix with a spatula or wooden spoon until it comes together. Continue kneading with your hands briefly until it forms a dough.

Note: The dough will be wet and sticky first, but after a few minutes as the fiber absorbs the liquid, it will become firmer.

Now shape the dough into a loaf so that’s a little smaller than your pan (see photo below). Then smooth out the surface with damp hands gently.

Now place the loaf on a piece of parchment paper and lift it into the pan. Sprinkle with sunflower seeds as desired and bake for 60-70 minutes in a preheated oven at 400°F (200°C), or until a skewer inserted into the center of your loaf comes out clean. Once done baking, lift the loaf out of the pan using the overhanging parchment paper. Place onto a wire rack and allow it to cool completely before slicing.

Gluten Free And Vegan Sourdough Bread

If you have any leftovers, store them in the fridge minimum of 5 days. You can also bake more loaves of bread and keep them in the freezer to last for months. Simply separate individual slices with parchment paper, then place them in freezer bags or airtight containers. This way you can remove and thaw them easily at any time!

Spread some Vegan Cheese, Vegan Cashew Ricotta, or Vegan Nutella for a quick and light snack. Or create a more elaborate treat by making some Avocado Toast with Garlic Mushrooms or a Grilled Cheese Sandwich! Mostly, I’ve made plenty of yeast bread – from this fluffy gluten-free white bread (that’s become a huge hit at home), to soft buckwheat bread, to soft gluten-free dinner rolls, to this gorgeous rosemary focaccia bread, and even this delicious gluten-free pizza crust.

While baking bread and watching the yeast work its magic as the dough miraculously doubles in size is usually very therapeutic for me, there are days when I’ve either:

On those days, I turn to baking a loaf of quick bread (which doesn’t include yeast and instead uses baking powder for leavening). A few favorite quick bread recipes on the blog include our easy honey oat bread, and this absolute best gluten-free banana bread.

Especially if you’re diabetic or insulin-resistant (and can’t risk your blood sugar spiking after just a few slices of bread), or simply prefer not to have to breathe in and hold your breath just to be able to pull on your favorite pair of high-waisted jeans.

You can simply replace the almond flour by making your own finely ground almonds (almond meal) at home! All you need is whole almonds, 5 minutes, a high-speed blender or food processor, and a fine-mesh sieve.

Add the dry ingredients (unsweetened shredded coconut, almond flour, salt and baking powder) to the bowl with the wet ingredients, whisking well until you get a liquid batter.

Grain Free Sandwich Bread

Pour batter into the prepared loaf pan, and bake for 40 to 45 minutes, until golden brown on top and a toothpick inserted in the middle comes out clean.

Allow the almond flour bread to cool for at least 10 to 15 minutes in the pan, before running a butter knife or a spatula around the edges and removing the loaf from the pan. Finally, allow the gluten-free almond bread to finish cooling to room temperature on a wire rack.

To store, wrap the cooled almond bread inplastic wrapor place it in anairtight containerand then store in the refrigerator for up to 5 days.

Low Carb Bread (almond Flour Bread)

To freeze, wrap the cooled almond bread inplastic wrapand freeze for up to 3 months. Let the frozen loaf thaw overnight in the refrigerator before warming it up slightly in the oven and then slicing.

Just bear in mind that almond meal will result in a darker bread since almond meal includes the reddish-brown almond skins, while blanched almond flour does not.

Yes, almond flour will rise with baking powder. However, given that almond flour is denser compared to normal flour, having a larger proportion of liquids/moisture in the batter (eggs in this case) will help the almond bread acquire a lighter and fluffier texture.
