There are more names for monkey bread than there are ingredients in this recipe! This fun-to-eat bread is also known as monkey puzzle bread, sticky bread, Hungarian coffee cake, and many more.

No matter what you call it, you will pull off an ooey-gooey, caramel-like piece of bread every time. The secret ingredient is the butterscotch pudding mix!

Rolls:There is no need to make your own homemade rolls; simply buy a package of Rhodes rolls. And, you don’t even have to thaw them ahead of time! Just look for the bake and serve dinner rolls.
I found that letting the rolls rest for 8-10 hours was ideal. However, if a quicker rise is desired, you can put the frozen rolls in a warm place. Then, it takes about 4 hours for the rolls to rise to the top of the bundt pan and be ready to bake. If you let them sit out more than 12 hours, they can get a little too big and start to deflate.
Generally, monkey bread is made in a bundt pan. But, you can definitely use a different type of pan to get the same delicious pull-apart Monkey Bread. You could use a casserole pan. But, the cooking times could vary when you are using a different pan. Be sure to check the middle of the bread for doneness. A bread pan or springform pan would also work.

Using Rhodes Rolls or any frozen roll dough makes this recipe come together in minutes. If you can’t find frozen rolls at your grocery store or if you just want to make your dough from scratch, my Easy French Bread recipe is an absolutely perfect dough to use. You would need to make 22 (slightly bigger than a golf ball) rolls out of the dough. You may have a little leftover. Don’t use that in the Monkey Bread or it might overflow your pan. You could make a mini loaf of French bread, a few regular rolls out of it, or my kids like to put small pieces of dough in the microwave for 20 seconds and then eat it with butter. It’s actually pretty good. 🙂
NOTE: If you make homemade dough you will not need to let them sit overnight. They will only need about 1.5-2 hours to rise before being baked.

If you do have leftovers, the bread will keep well for 2-3 days. Place it in an airtight container and keep it at room temperature out of direct sunlight.
Baked monkey bread can be frozen. Let it cool to room temperature and wrap it in foil and place it in a freezer bag. Keep the bread in the bundt pan. It will keep well for up to 3 months. Thaw it in the fridge overnight and warm it through in the oven to serve.
Monkey bread is traditionally baked in a bundt tin so that it forms a doughnut shape and it’s easy to pull apart. If you are in a pinch, you can use a large, high-sided loaf tin.
