Quick Easy Banana Nut Bread Recipe

Is an easy banana bread recipe, perfect for those last minute guests or lazy weekend breakfasts. Made with ripe bananas, pecans, and cinnamon this homemade bread is so airy and moist. 

Banana Bread can be made with or without nuts, or made into banana nut crunch muffins. Either way, it will be a family favorite for years to come!

Bananas: You’ll want bananas that are spotty and brown with a little bit of yellow. Ripe bananas have more sugars and are sweeter, the perfect addition to this bread.

Banana Nut Bread (super Moist)

Butter & Shortening: This banana nut bread uses a combination of shortening and butter. Shortening has a higher fat content (and melting point) so it makes a more tender bread. The addition of butter is for flavor. You can use all butter in this recipe if you prefer but I would suggest trying it with shortening too, the results are great!

Banana nut bread is considered a ‘quick bread’ because there is no yeast.To keep it moist, here are a few tips and tricks:

Banana nut bread will last at room temperature about 4 or 5 days. Keep it wrapped tightly in a cooler space on the counter.

The Best Banana Bread Recipe (with Video)

This banana nut bread recipe is a champion for freezing and can be frozen, thawed, and served (without anyone noticing!) for about 2 to 3 months.

Wrap it tightly in plastic wrap and then seal in a freezer bag with the date on it. To save freezer space, slice in 1 inch slices and layer in a zippered bag and place the bags flat in the freezer. Once they are frozen, stack them neatly. This also allows you to thaw only the portions you need.

This has been one of my favorite banana bread recipes since I can remember and I have to give my Grandma ALL the credit.  She literally makes the BEST and it was always a staple in her home growing up.  This banana bread is so moist and fluffy, incredibly easy to make and is the perfect way to use up those overripe bananas!  Everyone needs a staple banana bread recipe and I hope this one is yours!

Joy's Easy Banana Bread Recipe

Now for the disclaimer.  This is definitely not considered a healthy banana bread as it does contain butter and sugar, but SO MANY people have asked me for this recipe over the years that I wanted to share it on my blog for those who wanted to make it.  I mean hey, all things should be eaten in moderation anyway, right??  I have tried modifying this recipe several times to make it a bit healthier, but it just never comes out quite the same so I wanted you all to have the original recipe 😊

This particular recipe makes one standard loaf of bread, but you could also make 3 mini loaves (I promise your neighbors will thank you!) or even muffins!  See below for the different baking times depending on how you choose to make this.

To Store: This banana bread can be stored in an airtight container or wrapped in plastic or foil at room temp for up to 3 days, but make sure to refrigerate after that to keep this longer.  This bread will last up to a week in the fridge.

To Freeze: This bread freezes really well too!  You can either wrap the entire loaf in plastic wrap, aluminum foil or a freezer-safe bag or you can freeze individual slices.  When ready to serve, allow to thaw out overnight in the refrigerator and bring to room temperature before slicing.  This bread will keep in the freezer for up to 3 months.

The beauty of this banana bread recipe is you don't need a fancy mixer! A mixing bowl, a fork to whisk the eggs, and a sturdy spoon to mix the batter are all you need. The sugar amount is flexible. The original recipe called for a cup of white sugar, but most people, including me, do just fine with 3/4 cup, and many are happy with 1/2 cup.

This recipe calls for an 8x4-inch loaf pan, which produces a tall loaf. The recipe will also work in an 8 1/2x4 1/2-inch loaf pan, producing a slightly shorter bread. Since the pan is a bit larger, the bake time is shorter: 47 to 57 minutes. A 9x5-inch pan will yield an especially short but still delicious bread; bake for 45 to 55 minutes.
