That crackled crust on top of tiger rolls is the result of spreading the half proofed bread dough with a rice flour paste.

The rice flour is gluten free and so when the bread rises and expands in the oven ,the rice paste will not expand and they break and results in that characteristic appearance.

There are many different names for this bread ,some callit Dutch Crunch Bread or Tiger Bread (Tijgerbrood in Dutch) or Dutch Tiger Bread (tijgerbolletjes)or Tiger rolls and some call this bread a giraffe bread though the appearance of this bread is more similar to that of a leopard 🙂

Tijgerbrood / Tijgerbol

The crunchy crust of tiger rolls is made with a rice paste which is a thick paste made with some rice flour, water, oil, sugar, yeast and salt.

A tiger bread or Dutch crunch bread is made as a white bread bloomer loaf (dutch oven bread) or a regular soft white bread or dinner rolls; but the technique can be applied to any shape of bread.

After kneading the dough for 8-10 minutes, Our dough should be soft and smooth and it will bounce back when pressed and it will still show a tendancy to stick on to the surface.

Take a clean bowl ,place the dough inside it and then wrap it with a plastic film and let the dough stand rise in a warm environment for 30 minutes.

We can divide them into 8 small dough balls (78-80 g each) to shape them as dinner rolls or yeast rolls or tiger rolls.

It’s important that the mixture is spreadable in consistency, so adjust using small amount of water or rice flour to make it a thick spreadable consistency, if it’s not already at that stage.

Cover it again and let the loaves sit in warm environment for 40-50 more minutes to finish the final rising or until they are almost doubled in size.

The top of the bread will start to get browned at around 30 minutes, but wait for 5 more minutes to get the top turn completely golden brown.

If the shape of the bread is medium sized tiger rolls (79-80 g each ;the rolls when divided into 8 equal parts) then it will get baked in about 25 minutes of baking.

For medium shaped sandwich loaves (158 g each ;when the dough is divided into 4 equal pieces) it may take around 30-32 minutes of baking.

If the bread is a single loaf (640g each) ,then it will take around 40-45 minutes for it to get baked properly.

Though Tiger bread rolls are very similar to any other breads, the texture, taste and aroma of this bread is something that makes them unique.

The crust is finely crunchy and at the same time the crumb is very soft and fluffy.This tiger bread/tijgerbrood have a subtle sweetness to it which most of us love.

Tiger loaves or buns can be sliced horizontally and can be filled with any of our favorite fillings and can have as a sandwich as well.

As yeast is a fermenting agent or a natural leavener, when added in the rice flour paste, it makes the rice flour paste get fermented.

This makes the rice flour paste filled with air and thus, when it get baked in the oven, the outer crust will be more light and airy.

You can use any gluten free flour like millet flour or oat flour or almond flour , or bread crumbs or potato flour.We can use pastry flour as well ,as it contain less gluten.

Adding Marmite or malt extract or Vegemite or any other brand of yeast extract can slightly enhance the flavor the tiger bread/tijgerbrood.This can bring that bakery flavor (Tiger bread that we get from supermarkets) to the Dutch Crunch Bread.

There’s nothing special about the bread itself – its just regular bread dough. Its nice to have a party trick up your sleeve though, to jazz things up once in a while. The secret to getting the crackled effect is painting the half-risen rolls (or loaves) with a yeast paste made with rice flour. Let the bread finish rising, then bake as usual.

When the proved dough hits the heat of the oven, it continues to rise. The rice paste, because its gluten-free, doesn’t stretch and so as the dough rises, the paste ‘tears apart’ to give the distinctive mottled appearance.

Just as an aside, I always think it looks more like the patterning on a giraffe than a tiger. Still, if it were called giraffe bread, I wouldn’t be able to do this: *mimes clawing* rrrrrOWWLL!!!

In fact, I really don’t understand the snobbery attached to the use of bread machines. I use mine more like a food-processor, and no-one seems to mind if you chop stuff in one of them as opposed to by hand, so what IS the problem? Just pop in the ingredients and then I can do my own thing while it does its own thing, and bing! in 45 minutes the dough is ready to make into whatever takes my fancy. I still like to make speciality breads by hand, but for a basic dough, the machine can do it more quickly and more cleanly. Consequently, I don’t bother with all the weird stuff that seems to appear in bread-maker-specific recipes. Bottom line: if I wouldn’t use it when making bread by hand, then it doesn’t go in the bread machine. If you don’t have a bread-machine, you can use exactly the same ingredients to make the dough by hand.

We ate our first Dutch Crunch Bread in Portugal many, many years ago. This was long before I ever baked my first bread. We found it in the bread aisle while shopping for groceries. It was labelled Pao Tigre (or Tiger Bread) and looked so pretty that we picked it up. A beautifully cracked brown crunchy crust is the hall mark of this otherwise soft bread.

Tiger Bread or Dutch Crunch Bread is soft, slightly sweet bread with a crisp, crunchy topping that’s an interesting contrast. It’s not very difficult to make. The bread is typically made as a single oval shaped bloomer or round loaf. It can also be made into smaller buns or rolls. Buns or rolls make excellent sandwiches. This bread is best eaten the same day it is baked. If you live in humid conditions as I do, you’ll find the crunchy crust tends to soften the next day.

I have made Tiger Bread Rolls (also loaf) many times though not recently. You can find my Pao Tigre post here. I decided to bake the Tiger Bread Rolls once again for a couple of reasons. The first being that I thought it was time to revisit this bread.
