Low Carb Bread Recipe Lupin Flour

I FINALLY figured this out ya’ll! It only took me 3 failed loaves but the last lupin flour bread turned out PERFECT.

If you haven’t seen my other bread – my keto bread with vital wheat gluten and almond flour – I highly recommend. I based this recipe off of that one and it was actually really easy!

OK, like I’ve said before.. gluten is actually pretty keto friendly. It has minimal carbs and adds the stretchiness of wheat bread without the actual wheat.

Low Carb White Lupin Tortilla

One thing I will note, is that it took a considerably longer time to knead, even in a stand mixer, it took around half an hour. I was REALLY afraid that I would over-knead it but honestly, I think it could have been kneaded MORE. I definitely dont suggest hand kneading it unless you’ve got the strength and time.

If you’re wondering what lupin flour is, it is a legume, very similar to a peanut. If you have an allergy to any nut, I highly recommend to either avoid lupin all together or get a test to see.

Lupin Flour Bagel/bread Recipe

In a stand mixer, combine the vital wheat gluten, flour, inulin and instant yeast. (If you are using regular yeast, bloom it in the warm water)

The dough should become somewhat stretchy and you should be able to pull on a piece and it will stretch. If you're dough looks rough, is sticky and breakable, continue to knead.

Place a piece of cling wrap/seran wrap, over the tin and cover with a towel. Place in a warm area and let rise for 2 hours (check after 1 hour).

Uncover, and bake at 350°F / 175°C for 45 minutes to an hour. Cover with a piece of parchment papers if the top begins to darken quickly.

I’m quite pleased with the first loaf of bread and a few other baking experiments with lupin flour.  The bread has a nice firm texture and is moist.  It does not crumble apart like almond flour breads tend to do.  It has a more pleasant taste than most flax breads.  I will continue to experiment with the ingredients to try to achieve a whiter appearance and more “flour-y” taste.  I order my lupin flour direct from: http://www.lopino.com/product/21 .   Netrition.com also has recently started carrying lupin flour.  This recipe is not suitable until the grains rung of the Atkins Phase 2 OWL.  This recipe is unsuitable for Primal-Paleo on several levels.  I might mention that because of its slight “corn taste” this bread makes an excellent bread to crumble up for making cornbread stuffing!

Quiche With A Flaky, Low Carb, Lupin Flour Crust

CAUTION:  Lupin beans are a legume closely related to peanuts.  If you have a peanut allergy, I must inform you some peanut sensitive people react negatively to lupin beans.  Many of my low-carb cooking friends have had no problems eating lupin products whatsoever but I have found I do not tolerate this ingredient well, even though I am NOT allergic to peanuts.  Go figure…..no other legume bothers me.  😦

Low Carb Bread Machine Recipe

DIRECTIONS:  Preheat oven to 350º.  Lightly grease/oil a loaf pan.   Mine is an unusual shape at 4″x3″x10″.  In a large mixing bowl, measure out all dry ingredients and stir well.  Make a well in the center and add the eggs, oil, water and cream and using a for, beat the liquid ingredients up in the well and slowly incorporate the dry ingredients to form a smooth batter.  Mine was fairly thick.  Spoon into the greased loaf pan, leveling with your rubber spatula.  Pop into preheated 350º oven for 30-40 minutes or until it passes the toothpick test in the center.  Remove, cool slightly and loosen from the pan with a knife.  I easily slice mine into 16 ½” slices using the 10″ loaf pan.  Using a deeper, shorter more standard loaf pan, you will need to see how many slices you get and recalculate your per slice stats.  I will provide the numbers for the entire loaf to facilitate recalculating.This is the best low carb loaf of bread that you can make. Lupin Flour Waffle Recipe

There is cloud bread. You can make bread from psyllium husk powder and almond flour and coconut flour. But they can’t touch regular old white bread because they lack the yeast to rise them and the gluten to give them elasticity and a nice good chew. And as for store-bought Keto bread, it can just talk to the hand (because the face don't understand.)

It's a yeast-leavened low carb bread that uses vital wheat gluten to make up for the lack of gluten in the almond flour. So far I’ve shared recipes for Farmer’s Yeast Bread, Rye Bread, Raisin Bread andCiabatta. And not to brag, but they were fairly spectacular.

It uses Lupin Flour, which is a great low carb, high protein flour made from the lupin bean (more info here). Using this flour lightens the dough which allows it to rise just as high as normal white bread. So it’s every bit as tasty as regular bread you’d buy at the store, but each slice of this low carb yeast bread has just 5g net carbs.

The Low Carb Power Of Lupin Flour: Your Guide To Keto Baking

This is the best low carb loaf of bread that you can make.  It's a yeast leavened white bread with only 5g net carbs per slice.  Pure sandwich gold.

Step 2.  Add a ½ cup of warm water to another large bowl and mix in sugar until dissolved.  Mix in yeast and cover the bowl with a towel.  After 7-10 minutes the mixture should be frothy with small bubbles.  If it is not frothy, then the yeast is dead and you need to start over with fresh yeast.

Step 4.  Add remaining 1 ¾ cup water and 6 tablespoons melted butter to the frothy yeast mixture and stir to combine.

Step 5.  Either use a stand mixer with a paddle attachment or a wooden spoon to mix the dough together.  Slowly add the dry ingredients to the wet until fully combined.

Step 6.  The dough should be sticky and rather wet.  If it is too dry to knead, then add a little bit more water.  Knead the dough for 6 minutes with your hands or a dough hook on the stand mixer.

Step 7.  Form the dough into a ball and place it in the greased bowl.  Preheat the oven for 2-3 minutes until the temperature reaches 100-110 degrees.  Cover the bowl with a towel and place in the warm oven to rise for 1 hour.

Step 13.  Remove from the oven and place on one of the long sides to cool for 10 minutes.  Switch to the other side and cool for 10 minutes more.  Release the loaf onto a cooling rack and cool to room temperature before cutting.  Keto Lupin Dinner Rolls – No Dairy, Eggs or Nuts.
