Isn’t banana bread great? We are forever leaving bananas until they are brown, and banana bread is such a great way to use them up and avoid food waste. This banana bread is very easy to make – and the result is truly fabulous… it manages that trick of being super light and airy AND really moist AND it really tastes of bananas without being overly sweet or cloying. Seriously, this banana bread is insanely delicious – certainly the tastiest banana bread I’ve ever tried… and quite possibly the best banana bread ever!

Moist Banana Bread Recipe With Self Rising Flour

This banana bread is also really easy to make… You just combine the dry ingredients in a bowl. Then you mash the bananas in a bowl or jug, add the eggs and stir to combine. Tip the wet ingredients into the dry ingredients and stir, then add in the melted butter and stir again. So easy! No creaming, no folding, no whisking – just a bit of mashing and stirring. And no fancy equipment needed either! Then just pop the banana bread in the oven for 45 minutes and you are done. The whole process takes 1 hour from start to finish and, for most of that, the cake is in the oven!

Not only is this banana bread super easy and super tasty, it’s also a little bit healthier than regular banana bread: it uses brown self raising flour, rather than white (though it works well with white self raising flour too!), and also slightly less sugar and butter than I would normally use in a cake this size. I also add in a handful of mixed seeds for extra goodness (Though you could use chopped nuts or chocolate chips if you prefer!)

For best results, I recommend using loaf tin liners. If you don’t have any loaf tin liners, I have a neat trick for you: scrunch up a sheet of greaseproof paper big enough to fit in one of your loaf tins. Wet it under the cold tap to make it pliable, then use it to line the loaf tin. Repeat with the other tin.

Yes you can! Banana bread freezes really well. Simply wrap the cooked and cooled banana bread in a double layer of baking paper, followed by a double layer of foil and place in your freezer, where it will keep for up to 3 months. Defrost overnight at room temperature. Once unwrapped, store in an airtight container.

Self-rising flouris all purpose flour that has baking powder and a small pinch of salt already in it. Classic southern recipes usually use self-rising flour instead of plain flour. Even though some people may think it is self-raising flour, it is actually self-rising flour. I love making 2 ingredient cream biscuits, pancakes with self-rising flour, banana muffins with self-rising flour, chocolate chip cookies with self-rising flour, and waffles with self-rising flour too!

King Arthuris my favorite variety of self-rising flour. If you don't have a bag of it in your pantry, you can make your own self-rising flour really easily!

Cake Flouris used to make cakes. It is a finer flour so the cakes stay nice and light and airy. It usually has a lower protein content as well so cakes don't get tough.

Bread flouris used to make breads likesourdough bread. It has a higher protein content which helps develop the gluten in bread. Bread flour is also made from a harder grain, so it holds up better to making bread and the kneading process.

Simply The Best Banana Bread Recipe

Place the butter and vanilla in the bowl and mix until all the ingredients are fully combined. Add the sugar and eggs to the large bowl with the mashed bananas and mix well.

Add the flour to the wet ingredients. Fold the dry ingredients into the wet ingredients. Mix well but do not overmix at this point. You want to incorporate all the flour, but you don't have to get all the lumps out.

Pour the banana bread batter into the prepared loaf pan and bake for 50 minutes depending on your oven. After 50 minutes, check the bread for doneness by sticking a toothpick into the middle of the bread and taking it out. If there is no batter on the toothpick, the bread is done!

Yes! Banana bread freezes beautifully. Allow the banana bread to cool, wrap the bread in plastic wrap, and then place the loaf of bread in a Ziploc bag. Freeze for up to 3 months. To defrost, take the banana bread out of the freezer and allow it to defrost on the counter.

Place the leftover banana bread in an airtight container and it will stay fresh on the counter for up to 4 days. You can also keep the banana bread in a Ziploc bag on the counter.
