Whenever the kids ask me, “what’s your favourite fruit, Mummy?” the answer will always be, bananas! I’ve always been a fan of bananas, in fact anything banana – banana sweeties, banana puddings, banana hair products; I currently have a banana shower gel stood in my shower. So it’s really no surprise that one of my favourite bakes from Granny is her Banana Loaf.

It’s another one of those recipes that Granny can rattle off the top of her head without a second thought – probably because she makes it so much!

Banana

Always a popular choice for the mothers that Granny serves at the café she works in, with the reasoning that it’s a healthier choice of snack for the kids asking for sweets. I suppose I can see the logic (fruit = healthy, right?) but given the amount of sugar that also goes in Banana Loaf alongside the 1-of-you-5-a-day bananas, it’s perhaps not the healthiest snack there is.

Healthy Banana Bread (whole Wheat)

Made this banana loaf, it was so simple to make & absolutely delicious; even my husband who doesn’t like banana loved it!

Let’s just forget healthy for a moment though and appreciate how delicious and moist this Banana Loaf is. Compared to lots of other banana bread recipes I’ve tried, this one is pretty straight forward too – why make something more complicated that it needs to be, especially when simple means so good in this instance!

Because it’s so easy, the kids love getting involved in baking it too. My boys love nothing more than finding a slightly brown banana and waiting for it to become overripe, knowing it’ll soon be time to mash it into a Banana Bread batter.

Coconut Flour Banana Bread

• The riper your bananas, they better the flavour! I don’t make Banana Loaf nearly as often as I’d like because banana’s don’t last long in our house but the brown spotted, or even completely black bananas will always give you the best banana loaf.

• Banana loaf can also be frozen. Make in batches, keep within it’s grease-proof lining, wrap in tin foil and freeze for up to a few months.

Nut-free: This recipe for banana loaf doesn’t use any nuts, but be sure to double check your ingredients individually for any hidden nuts.

Vegan: For a vegan banana loaf recipe, simply use a dairy-free margarine instead of butter and a tablespoon of applesauce instead of an egg.Super light and airy AND really moist AND it really tastes of bananas, without being overly sweet or cloying. Isn’t banana bread great? We are forever leaving bananas until they are brown, and banana bread is such a great way to use them up and avoid food waste. This banana bread is very easy to make – and the result is truly fabulous… it manages that trick of being super light and airy AND really moist AND it really tastes of bananas without being overly sweet or cloying. Seriously, this banana bread is insanely delicious – certainly the tastiest banana bread I’ve ever tried… and quite possibly the best banana bread ever!

Gluten Free Banana Bread (made With Almond Flour)

This banana bread is also really easy to make… You just combine the dry ingredients in a bowl. Then you mash the bananas in a bowl or jug, add the eggs and stir to combine. Tip the wet ingredients into the dry ingredients and stir, then add in the melted butter and stir again. So easy! No creaming, no folding, no whisking – just a bit of mashing and stirring. And no fancy equipment needed either! Then just pop the banana bread in the oven for 45 minutes and you are done. The whole process takes 1 hour from start to finish and, for most of that, the cake is in the oven!

Not only is this banana bread super easy and super tasty, it’s also a little bit healthier than regular banana bread: it uses brown self raising flour, rather than white (though it works well with white self raising flour too!), and also slightly less sugar and butter than I would normally use in a cake this size. I also add in a handful of mixed seeds for extra goodness (Though you could use chopped nuts or chocolate chips if you prefer!)

Easy

For best results, I recommend using loaf tin liners. If you don’t have any loaf tin liners, I have a neat trick for you: scrunch up a sheet of greaseproof paper big enough to fit in one of your loaf tins. Wet it under the cold tap to make it pliable, then use it to line the loaf tin. Repeat with the other tin.

Classic Banana Bread Recipe

Yes you can! Banana bread freezes really well. Simply wrap the cooked and cooled banana bread in a double layer of baking paper, followed by a double layer of foil and place in your freezer, where it will keep for up to 3 months. Defrost overnight at room temperature. Once unwrapped, store in an airtight container.

Banana bread is one of those classics that everyone does differently – there’s no right or wrong way, but I feel like I’ve finally nailed it

I love a banana bread that’s insanely moist, packed with banana flavour and a little gooey compared to a regular loaf cake. Plus, it’s gotta be super easy to make without tons of weird ingredients.

And if that sounds good to you, then we might just have the same taste in banana bread (and you’ll probably love this recipe too). It only has 6 simple ingredients and best of all – you can customise it however you like.

Ultimate Banana Bread

In the photos, I’ve added chocolate chips, but you could also add 2 tsp of cinnamon for a little warming spice. It goes sooo well with banana! And I’ve seen some of you add fresh raspberries to it too. You really can mix it up however you like!

Obviously, ripe banana as a must here as they contain more natural sugars and you’ll get the best results. Once mine start getting those black ripening spots, my mind always turns to banana bread!

Easy

You can of course use bananas that are smack bang in the middle of being green and being ripe (so no signs of over-ripening yet). But you won’t get that intense banana flavour and also they’re still really hard to mash.

Spelt Banana Bread

You can actually speed up the banana ripening process by placing them into a paper bag (or perforated plastic bag) and adding in a couple of ripe bananas or an apple. This the amount of ethylene gas circulating around the green fruit and makes them go ripe quicker.

Also, make sure that all ingredients used don’t have any gluten-containing ingredients. Then make that that they also don’t have a ‘may contain’ warning for gluten, wheat, rye, barley, oats (which aren’t gf), spelt and khorasan wheat (aka Kamut).

Of course you can! All you need to do is use dairy free spread instead of butter. Plus, if you’re adding chocolate chips, make sure they’re dairy free also.
