Buttermilk Pumpkin Spice Bread

You’ll need the typical banana bread ingredients for this one! Specifically over ripe bananas (almost all black is what I aim for), flour, sugar, chunky applesauce, eggs, and miniature chocolate chips.

There is no butter or oil in this recipe and you won’t miss it at all! The chunky applesauce works the same way the oil would work in the bread, and I actually think it enhances the flavor even more.

Yes. In a small bowl, mix 1/3 cup milk with 1 teaspoon vinegar or lemon juice. Let it sit for a few minutes before mixing it in with the rest of the ingredients.

Sure! Just use the same amount as listed. The chocolate chips may sink down towards the bottom of the loaf, though. The taste should still be great!

2. After the bananas are mashed, add in the chunky applesauce, buttermilk, and eggs. Mix well with a rubber spatula to incorporate all the ingredients well. Set this bowl aside for a few minutes.

3. In a separate, larger mixing bowl, combine the flour, sugar, baking soda, and salt. Stir this well to make sure the ingredients are mixed.

4. Pour the banana mixture into the bowl with the flour mixture. Using a rubber spatula, stir these together well. Be sure to scrape the sides and the bottom of the bowl to make sure all of the dry ingredients are moistened.

5. Grab a 9 x 5 inch loaf pan and spray it generously with non stick spray. You could use butter to do this as well. Pour the banana bread batter evenly into the greased loaf pan.

6. Bake at 325 degrees for 1 hour. Check to make sure the banana bread is cooked through by inserting a skewer, or a thin knife, into the center of the bread. If it comes out mostly clean, it’s done!

Almost No Fat Banana Bread Recipe

Be sure to wrap the bread in foil or plastic wrap. Keep it in the refrigerator between servings and be sure to use it within three days.

This buttermilk banana bread freezes so well! Wrap the loaf in plastic wrap or foil, place in a plastic freezer bag, and freeze up to 3 months. Thaw the bread in the refrigerator overnight before serving.

You can use sweetened or unsweetened applesauce in this recipe. I used sweetened but either will work fine. You can easily add nuts too. I have made this many times, sometimes I add pecan and sometimes I don’t. This bread is really good and a wonderful way use bananas.
