This beer bread recipe is sooo easy and so delicious, and only requires a few pantry staples. Since we’re all in lockdown here in NZ, I’ve coined the term ‘Lockdown Loaf’ – and it really is perfect in that sense. Stir the beer bread it up in one bowl – no kneading, no proving, no yeast needed. And if you need a gluten-free bread option, I’ve included that below the recipe.

No Knead Seed Bread

Pour in the beer/water and stir again to combine into a sticky dough. Scrape in to the prepared tin with a spatula and smooth out.

Bake in the oven for 40 minutes – it will have risen and puffed up and be all golden and delicious looking.

Serve hot or warm with any toppings you like – it’s awesome plain with butter, and I like Vegemite and Marmite too!

For best results, I like to also add either 2 tbsp of either psyllium husk powder, or ground chia seeds. Adding one of these helps give the loaf that chewier, springier, bread-like texture that’s normally missing with gluten-free bread (which can be quite chalky.) This isn’t essential, though.

Then after mixing the dough, it’s helpful to let it rest for 10 minutes in the tin before it goes into to oven, to let the chia or husks swell up do their thing.

You’ll also need to use a GF beer. If you can’t find one, soda water works – or a dry, not-too-sweet ginger beer or kombucha (omit the sugar if using these as they are already sweet). Lemonade would be too sweet.

If you have whole chia seeds at home, you can grind them in a mortar and pestle, coffee grinder, high speed blender or bullet to make a powder.

You can use lemonade for a sweet loaf – it’s lovely smeared with butter or dairy-free spread or unflavoured coconut oil – topped with jam or honey!

Recently I’ve been baking bread in a dutch oven within my big oven. The idea is to use a solid casserole dish (lid-on) in a very hot oven. I learned this from a Donna Hay cookbook — it is the secret to a crusty crust.

My other recent breadmaking success is to use my cake-mixer dough hook. Who knew a cake mixer hook could knead dough beautifully? My Kenwood is not large, so I can’t use more than 5 to 6 cups of flour, but it kneads dough effectively. It does moan and growl a little from time to time.

Ingredient

Mix the flours and salt in a mixer bowl (or large glass or ceramic bowl if doing by hand). In a separate bowl, mix the yeast and treacle in the warm water and leave for 15 minutes.

Paraoa Parai / Fry Bread

Insert the dough hook into the mixer and, on low speed, add the water slowly until a ball forms and the kneading process is underway. More or less water may be needed. Add too much water, and it will slop in the bowl. If this happens, add more flour. Leave the mixer on the lowest speed for 10 minutes.

If kneading by hand, mix with a flat-bladed knife on a floured surface. Add the water slowly to the flour until a ball of dough forms. Knead for around 10 minutes (it’s a good workout).

Remove the dough from the mixer bowl to lightly oil the bowl (any oil will do). Return the dough to the oiled bowl, cover and leave in a warm place for at least an hour (sometimes mine sits forgotten on the kitchen bench all day if I’m distracted in the garden).

Epic Garlic Bread

When the dough has doubled in size, lightly knead it for a minute or so on a floured surface. Return the dough to the bowl while the oven heats. Place a heavy, lidded casserole dish into the oven and turn the temperature to 240°C.

When the oven is at temperature, lift the casserole dish out carefully using thick oven gloves and place on a heatproof surface. Remove the lid and carefully sprinkle flour around the base and sides of the dish (no burnt wrists now) to stop the dough from sticking.

Place the dough in the centre of casserole dish and, with a sharp knife, score the top on a diagonal 3 to 4 times. Place the lid back on and return the casserole dish to the oven. Set timer for 20 minutes, then reduce the heat to 220°C and bake for a further 30 minutes.

Check the bread at this stage by lifting it out (carefully) to a heatproof surface, removing the lid and giving the bread a sharp rap with the knuckle. If it sounds hollow, it is probably done. Friends, we are in the middle of a very unsettling time. A strange virus has taken over the world, we have been instructed to stay home and suddenly popping out to the shops for a loaf of bread is something that just can't happen. We can't see our friends, there are no social gatherings happening and all non essential businesses are closed.

It is very overwhelming and there is a whole lot that is completely out of our control. What I am choosing to focus on, is what I can control.

We are so lucky that living rurally, not a whole lot changes for us. We are at home most days anyway and as our kids aren't yet at school we don't have that to contend with either. Our pantry and freezer is stocked, our garden is growing and I am going to be spending this time making even more things from scratch than before.

The thing I want to encourage over this time is coming together as a nation and world and connecting even though we have to physically isolate. We are so incredibly lucky to be isolating in a time where it's never been easier to stay in touch online. I always use active dried yeast – this yeast needs to be activated before using it in the dough. The reason I like using this yeast is that it’s a safeguard to bread rising failure. You can actually see that the yeast is activated which is essential for the bread making process!

To activate active dry yeast, add it to a small amount of warm water (somewhere between 40-45°C/105-115°F) and sugar (the amount called for in the recipe) and whisk it around and leave it sitting for about 5-10 minutes. It will start to bubble and foam when it is ready. If this doesn’t happen your yeast may either be too old or the water may have been too hot or too cold. Throw it away and start again. When the yeast is activated using warm water it produces carbon dioxide gas, which causes the bread to rise. You can also use instant yeast (use the same amount as active dry yeast) or Surebake yeast which is a mixture of active dry yeast and bread improvers and is typically used in breadmakers. Both these types of yeast can be added directly to the other ingredients without activating the yeast first. You will need to use twice as much Surebake yeast as you would active dry yeast.
