Step #2:  Place the grated zucchini into a colander and mix it with the extra pink salt. Let it sit there while you mix the rest of the ingredients.

Step #4:  In a large bowl, mix all the ingredients together (except for the zucchini), starting with the dry ingredients and adding in the eggs and butter.

Step #6:  Using a hand-held electric mixer, mix all of the ingredients together well. Spoon the batter into the prepared loaf pan.

Step #7:  Bake bread for about 45 minutes. After the first 25 minutes, cover the bread with a piece of foil to prevent burning.

Step #8:  After the bread cools down, slide a knife around its edges and place upside down on a baking rack. The bread should come pop out perfectly! Turn it right side up and enjoy!

I love using the MaraNatha coconut almond butter which is a combination of coconut butter and almond butter.  It tastes great and you get the benefit of the medium chain fats within the coconut butter and the long-chain fats in the almond butter.  Both coconut and almond butter also provide a lot of good fiber.

The overall recipe makes a high fat count, about 80% of calories, moderate protein (about 15% of calories) and very low carbohydrate count (about 5% of calories).  This is within the ideal ratio for a ketogenic diet, making this perfect for someone trying to reduce inflammation and get into ketosis.

Zucchini Coconut Keto Bread (yummy!)

Bread is one of our greatest comfort foods but also one of the most inflammatory foods we can consume.  This is because most of the bread on the market contains gluten and they are also very high carbohydrates.  This recipe is loaded with healthy fats, clean proteins and great prebiotic fibers.

Coconut flour is a preferred flour as it is low in carbohydrates, hypoallergenic (unlike almond flour which many individuals have food sensitivities too) and full of healthy prebiotic fibers that nourish the beneficial microflora.

In general, this recipe is low-carb although adding the honey would bump up carb content.  If you are really focused on weight loss and/or reducing inflammation than I wouldn’t use honey very often.  If you are making this for a special occasion and want to impress, put the honey in there!
