Eggless Banana Bread Recipe Trini Style

Banana bread is a favourite of anyone, with this recipe I added some oats, walnuts and cinnamon to give some warmth and texture. And it’s done in One Bowl!!

Who doesn’t love Banana bread? It has a wonderful flavour that just warms you up inside. It’s a great way to use up extra ripened bananas as well, which I always have on hand. For this recipe, I spruced it up a bit with some oats and cinnamon because cinnamon and oats pair so well together. One thing I don’t like, however, is the fact that I always have to whip out my mixer whenever I have to make banana bread. So for this recipe, I wanted to make it as easy as I can; all you have to do is fold the wet ingredients and dry ingredients together-

In Trinidad, however, we often fast or abstain from meat and eggs at various times throughout the year, so I wanted to create an eggless version that I can whip up on busy weekdays during the fasting times. The method used here, is the same as for muffins and quick breads; gentle folding. Once you do not over-mix, you will get a nice soft bread which is just as enjoyable.

Learning Time Did you know banana is a natural egg substitute? The moisture and creaminess in the banana acts as a binder. Add 1/2 a medium banana for each egg in recipes for muffins, pancakes or cakes. Just keep in mind that it will give your foods a distinct banana flavour and add some sweetness.Ingredients

Combine the dry ingredients and set aside. Combine the melted butter, mashed bananas and vanilla in a separate bowl or measuring cup. Add the banana mixture to the flour mixture and gently fold. Remember DO NOT OVERMIX!!

Pour into your buttered or oiled loaf pan or mini loaf pan of 8 mini loafs, and top with oats and walnuts if desired. Bake for 20 minutes if it is the mini loafs, or 30-45 minutes if it's one big loaf pan. The time may vary depending on your oven.

Let it cool in the pan itself for 10 minutes. Then loosen the sides using a butter knife and invert it on the cooling rack. You can slice it while it’s warm or let it cool down completely and then slice.

Thaw or Reheating: Unwarp the slice, place it into a plate and microwave it for 30-45 seconds. Check if it needs a few more minutes and enjoy. Do not overheat into the microwave otherwise, it may start to dry out and becomes chewy.

This quick bread is perfect for dinner; it also makes a good dessert. This banana raisin bread recipe can make two small loaves (as seen below) or one large loaf.

When I think of banana bread, I normally always have a couple of overripe bananas. And if I am in the mood as well I would gladly make this bread. Most times, I have to consider if I want a plain banana bread and a special banana bread. One takes a little long to make make than the other. So, if my time is limited, and I have a lot of things to do at them moment, I would opt for the plain banana bread. This bread is simple, much like the one here. This one is the simple banana bread.

What is the special banana bread you ask? Well, you already know it will take a little time to prepare. An additional ingredient would have to be prepared and added to the bread. It could be coconut, chocolate, nuts (such as walnuts, almonds, or pecans), it could also mean a number of changes done to the gluten content of the flour. You see, the coconut would have to be grated, the chocolate or the nuts chopped, and the flour have to be carefully measured. This is not the banana bread I am making here. Anyway, this banana raisin bread is the simple one. I don't have the time to do the extras, I just just want a tasty bread for dinner. As usual, the bread will contain some amount of wheat. Wheat helps give the bread a wonderful texture, where it is not too soft, I don't like banana bread that is too soft and excessively moist. This one is in the middle. It is neither dry or too moist. The raisins help banana and raisins help sweet it, as it does not contain much sugar.

However you can remove the sugar from the recipe entirely and add an extra half cup of chopped raisins. You will not miss the processed sugar at all. As I said, the bananas can also be used to sweeten the bread. Just use very ripe bananas, no additional raisins would be needed. The bread would be just perfect!
