Eggless Fruit Bread Recipes

A Fruit Bread or Fruit Bun is a sweet bread, roll or cake made with flour, fruit and fruit peels, spices, nuts, seeds and sometimes alcohol too. This Fruit Bread recipe is a vegan, egg-free and non-alcoholic version made with whole wheat flour in a larger proportion along with candied orange peels, tutti frutti and glazed cherries. This Fruit Bread is very easy to make and you can add chopped dry fruits and edible seeds like sunflower, sesame, pumpkin or flax to make it richer in nutrition, taste and texture.

I’ve been a great fan of Fruit Bread or Fruit Bun for a long time now. I always picked these and other artisan bread loaves over cakes, muffins or cookies in a bakery or super store.

I developed this homemade Fruit Bread recipe, and things changed. Nowadays, I don’t even look at the bread section at any store.

I make them all at home and that’s the best part. Few other breads that I really like are Focaccia, Pita Bread and the usual White Bread, Whole Wheat Bread and Brown Bread that I make at home.

Whether you make Fruit Bread or Fruit Bun, it pairs really well with tea and coffee. You can spread some butter on the Fruit Bread slices and enjoy it that way too. At home, I prefer having this sweet Fruit Bread just as it is.

Tutti Frutti Bread

Irrespective of the popular belief that the Fruit Bread has its roots in Britain, it is not really where it belongs. The Fruit Bread is 2000 years old and has its origin in ancient Rome. Roman soldiers carried it as a snack to battlefields as it had a good shelf-life.

The Romans had their own Fruit Bread recipe which included barley mash, pine nuts, raisins, pomegranate seeds and honeyed wine. They shaped it as a cake and called it ‘satura.’

It could be due to the quality of yeast or the yeast may not have proofed well. Less warm water won’t activate the yeast and hot water will destroy it.

Yes, you can. Use this conversion: ½ tablespoon dry active yeast = 1 teaspoon instant yeast. You can make this Fruit Bread in the convection mode of a microwave at 170 degrees C.

Yes, it can be. But with only whole wheat flour, the loaves may turn out dense. So, you will have to add some acidic agent like lemon juice, vinegar, buttermilk or curd, which will help in softening the texture.

Eggless Fruit Cake Without Oven Recipe By Naheed Alam

You can add 1 tablespoon lemon juice or vinegar when you add oil in this recipe, and then knead. This way you can skip both all-purpose flour and cornstarch.

Opt to add any neutral tasting oil instead of sunflower oil. The oil should not have any flavor or aroma. You can also use unsalted butter instead of sunflower oil.

In a convection oven, the baking temperature is usually reduced by 10 to 20 degrees. If you do not reduce the baking temperature, then the time taken for baking will be less.

So, either you reduce the baking temperature or reduce the time. In both these cases, it’s better to keep a check on the cake as baking occurs quickly in a convection oven.

The upper crust of the bread came out hard and thus broke while slicing. While the inside was moist. What could be the reason?

There are many reasons that could lead to the hardening of the crust. It could be the inappropriate temperature of the oven or under formation of gluten in the bread dough because of not kneading the dough well.

Check the doneness of the dough by stretching a small portion of the dough. If it doesn’t break, it means it is kneaded well.

Peach Quick Bread (loaf Cake)

Simple and easily available ingredients in pantry like all purpose flour, oil, sugar, Yeast, salt and water is all needed to make this Bread. You can customise candied fruit to your liking with a hint of cinnamon or any spice. I did not add any spice and want it to be plain Dried Fruit Bread.

Firstly, add instant yeast, sugar to lukewarm water and let it sit it for a minute or two . Meanwhile chop all the candied fruits into small pieces. In a wide dry bowl, add sifted all purpose flour .To it add yeast mixture, oil, and salt and mix well with a spatula until it is well combined . Now sprinkle flour on a clean kitchen counter and transfer the bread dough and knead well for 12 to 15 minutes till dough turns smooth and soft .Roll the dough into a rectangle shape and add chopped candied fruits and gently mix the bread dough. Transfer the bread dough in a well greased bowl and cover with cling film or clean towel. Let it sit for first proving for about 1 hour or until it has doubled in size.

After first proving, punch the dough to deflate the air in the dough. Divide the dough into two equal halves. Place in a greased loaf tin and cover with a cling wrap for second proving .Let it sit for 30 minutes or until it has doubled in size. Preheat oven to 180 C and bake for 30 minutes or until it is slightly golden brown. Dried fruit bread/eggless is ready to devour.

Vegan Fruit Cake Recipe (eggless Fruitcake!)

In a dry wide bowl add 3 cups of all purpose flour and add yeast mixture (1 teaspoon yeast, sugar mixed with ¼ cup lukewarm water)

Sprinkle flour on a clean kitchen counter and knead for 10 to 15 minutes until bread dough turns smooth .Flatten the dough by stretching with clean palm as shown and add chopped dried fruits.

Now gently cover the dried fruits with a dough and gently mix until all the the dried fruits are evenly mixed in the dough. Place the dough in a greased bowl and cover with a cling film for 2 hrs or it double in its size.

Tutti Frutti Cake Recipe (bakery Style)

Divide the dough into two equal halves .Place in a greased loaf pan for second proving . Cover with cling film and let it sit for 30 minutes or until it double in size.

Preheat oven to 180 C and bake for 30 minutes or until it is brown on top. Remove loaf tin and brush surface of the bread with melted butter (purely optional).Allow to cool the tin only for 10 minutes and remove bread to avoid soggy at the base. Cover the bread loaf to achieve soft crust.

Let it sit over night for best result. Always avoid slicing when bread is warm. Slice next day with a serrated knife and serve as it is or with jam or butter.

Eggless Christmas Fruit Cake (no Alcohol)

Firstly ,first proving of bread is important to allow the yeast and gluten to develop and it helps in enhancing the flavour of the Bread.

Do not over – prove at second stage as it end up with a Bread loaf, where the crust separates from the Loaf.
