Lemon Bread – this easy quick bread recipe is bursting with lemon flavor. It’s got such a great lemon flavor like pound cake but it’s a lemon loaf recipe – great for an easy breakfast or brunch!

One of the things I love the most is LEMON. I can never get enough lemon in dessert or breakfast foods. Lemon muffins, lemon pie, lemon cookies…you name it I LOVE IT and so do you all!

Glazed

This is most definitely in the bread-not-cake category. The crumb is similar but it’s not as sweet as a cake and is much closer to the texture of banana bread (without the bananas). The lemon flavor POPS, thanks to lemonzest and lemon extract and we love the simple lemon glaze on this homemade lemon loaf!

Lemon Almond Bread {quick Bread}

There is no juice in the bread itself because lemon juice doesn’t add much flavor. The real flavor of the lemon is the zest and the extract.

You can skip the extract if you must but don’t skip the zest! Adding lemon juice won’t alter the flavor too much.

This recipe is designed for an 8×4-inch loaf pan. You can use a 9×5-inch but the loaf won’t dome and will be flatter on top.

Lemon Poppy Seed Breakfast Bread Recipe

I always recommend sticking to the instructions and using what’s called for, so grab a can of evaporated milk for best results. However, in a pinch you can substitute milk, non dairy milk, half and half or cream. The result may be a bit different crumb than pictured.

Store covered on the counter or freeze it for up to 3 months. To freeze, wrap the whole loaf in plastic or place slices in sandwich bags and seal.

If you’d like, you can make the honey lemon glaze, but the lemon loaf is delicious on its own! Just combine the ingredients for the syrup on the stovetop. Use a toothpick to make holes in the top of the loaf and pour over the warm syrup.

Once the bread has cooled, place it in an airtight container. It will keep at room temperature for 2 days. Cover it with foil or a plastic bag to prevent it from drying out.

As you know if you have been a reader for a while, I love lemon!  It adds such a vibrant flavor to any recipe I make.  This time of year I always seem to start gravitating toward fresh fruit inspired recipes even more!  So, when I was shopping at a local market and saw tons of fresh lemons, this recipe immediately started forming in my mind!  I wanted a mix of cake and bread with a fantastic sweet and sour glaze.  Man did I create a winner with this one!

Buttermilk Lemon Bread

These ingredients are mostly pantry staples that you will have on hand.  If you are an avid fan of lemon, I recommend keeping a lemon (or two) in your freezer to use for lemon recipes.  Lemon extract or store bought lemon juice just don’t have the same outcome as freshly squeezed lemon juice or grated zest.  To freeze whole lemons, place them in freezer bags (remove as much air as possible before sealing).  Then, to thaw, microwave for a few seconds or place in cold water for 10-15 minutes.
