Low Cholesterol Bread Recipe

It seems that we are regularly being told we don't eat enough wholegrain - and this is an excellent way of adding extra to your diet (after all, wholegrain is good at reducing cholesterol too). I found brown bread a slightly trickier customer than white bread in terms of baking it... It takes more water than the recipe says sometimes, and can benefit from extra time kneading I reckon... Unpredictability and additional kneading aside, this bread is always much much tastier than shop bought bread; so even disasters are usually happy ones!

I use a varying mixture of both flours depending on exactly how brown a loaf I fancy (50/50 is good, a bit like the homegrown version of Mighty White loaves but much nicer… how old am I?)

In an hour the dough should have risen – give it a quick knead again, and this time put into your loaf tin lined with greaseproof paper.  Leave to rise for an hour again, covered with a tea towel
