While I wholeheartedly appreciate all the varieties of gluten-free and paleo breads that are on the market today, unfortunately, the majority don't agree with me. Too many starches can wreak havoc on sensitive digestive systems and the additional additives can cause more harm than good. Certain ingredients that are ideal for some, can be detrimental to others. That's life of course, but I haven't lost all hope. There are ways you can enjoy a sandwich or avocado and egg toast with a few alternatives.
And if you're a nutrient junkie like me, then you're in luck, as this flatbread contains some pretty impressive and nutrient-dense foods, such as broccoli, almond flour, ground flax, nutritional yeast, eggs, and sunflower seeds.

This brings me to the reason I wanted to make this recipe in the first place. I've recently been diagnosed with estrogen dominance (

) and some of the best things to eat for estrogen dominance are cruciferous veggies like broccoli, cauliflower, broccoli sprouts, cabbage, Brussels sprouts, and flax seeds, among other foods. Hence the reason why I wanted to pack so many of them into this flatbread.
In a nutshell, estrogen dominance is exactly what it sounds like, the ratio of estrogen to progesterone is not in balance with estrogen being much higher. When excess estrogen circulates in the body it can lead to

Diet as well as proper elimination play a huge role in correcting estrogen dominance without jumping to medication. While I don't have a problem with medication, I think taking an approach that lets the body naturally heal itself, is the best way. Or DIM, which produce enzymes that help the liver properly metabolize estrogen, as well as phytoestrogens, which actually bind to bad estrogen and eliminate it.
Step 1. Preheat the oven to 350 degrees. Add broccoli florets to a food processor along with sunflower seeds and pulse several times until the broccoli is broken up.

Step 3. On a small parchment paper-lined sheet tray, spread the mixture evenly with a spatula. Bake on the lowest rack for 20 minutes. Let the broccoli flatbread cool for 5 minutes then cut it into pieces.
Step 4. The broccoli flatbread can be stored in an airtight container in the refrigerator. I like to toast the slices and use them for making avocado toast and egg, or simply use them to make a sandwich.
When it comes to reversing estrogen dominance, try to buy organic whenever possible. Besides it being better for you, the florets are more compact and smaller in organic broccoli, which is ideal for this flatbread. Of course, if there is no organic available, use what you can.

One Bowl Almond Flour Banana Bread (paleo, Gluten Free)
Nutritional yeast offers loads of vitamins, minerals, and amino acids, making it an impressive ingredient to include in this broccoli flax flatbread. You can find nutritional yeast in just about every grocery store, health food, or specialty food store.
Ground flax is one of the best things you could eat for estrogen dominance as it binds to existing estrogen in the body and is eliminated. Flax seeds are impressive for increasing and decreasing estrogen according to whatever the body needs. Additionally, ground flax works perfectly in this recipe as a binder as well.

To demonstrate my pure infatuation with hummus, let me share an example. Over the weekend, my dad came to visit! He had been travelling for business and was able to stop over Utah for the weekend. I had been so excited about his visit for weeks! Being away from home, I really miss spending time with my parents.
The Best Easy Healthy Broccoli Salad Recipe (gluten Free)
My dad truly is one-of-a-kind. I respect him a lot, not only because of his love for hard work and his job, but most importantly his success at being one excellent father. To me, he exemplifies everything I want to become. I remember feeling a sense of awe as I reflected on the wise advice he had given Zoe and I regarding our future careers, college, marriage, job hunting. Over dinner, he even went a detailed explanation of an entire interview, recruiting process and gave many incredible examples of his own experiences in the business field. As I studied my dad’s face, I had noticed that he did seem a little concerned. His furrowed eyebrows and his intent gaze were a little disconcerting. It was the kind of expression that only could describe what a parent could feel for their child – “parental love”.
Knowing that Zoe and I wanted to have a good meal, he insisted we picked something WE wanted to eat. Zoe and I decided to introduce him to one of our favorite restaurants in provo – Aubergine. I love my dad because he has such an adventurous taste buds and such great instincts for good food. My genetics and love for cooking came through his side of the family and I will forever be grateful for that. I helped him order a delicious hummus, eggplant caponata, chicken, tomato-cucumber, carrot salad stuffed pita sandwich, paired with a vegan cashew cream, cauliflower-broccoli soup. His slight smile and slow nod indicated his approval for my choice. He loved it! To be really honest, it was the hummus. Anything with hummus just tastes INCREDIBLE.
Even after 18 years of living at home, even after many vacations, even after countless family meals – there just never seemed to be enough time to spend together. The last few precious moments of our 2-day daddy and daughters date was spent over a meal of packed filled with hummus. And it was well worth it.
Broccoli Banana Bread (yes, Really)
Its now only been a couple hours since he’s been gone, but Zoe and I miss him. We created this sandwich filled with everything my dad adores – avocado, hummus and tomato-basil salad (you can honestly put anything you want!) Years ago, in high school, Zoe and I experimented with a tomato bruschetta recipe and I still remember the exact same smile and silent nod when he first tasted it. He loved it – just as much as he had loved the hummus. I couldn’t help but feel compelled to recreate this delicious bruschetta topping to pair with this amazing flatbread today. I create recipes based on memories, based on emotions, tailoring them to people. This is simply a few elements of our scarce memories together. This is what I call a sandwich layered with love.

Vegan: I haven't tried using flax eggs in place of eggs for the bread. I have read comments on some attempts but I didn't think they were successful. You may use your own vegan bread recipe!
