Vegan Bread Recipe Without Yeast

The preparation will take you 15 to 20 minutes and the baking takes 35 minutes. All this meaning, it will be less than an hour from start to the finished and ready bread for you to taste. I have to admit, I’m not big on making bread in general as I’m kind of too lazy to do all the proofing, kneading, waiting… it also scares me a bit, haha. So that is one of the reasons why I’m so happy to have this recipe. It is also wholesome, made with spelt and rye flour, oat milk and abundance of healthy seeds, which is also immensely important to me.

This is essentially a recipe for a traditional Irish Soda Bread which I veganized and made wholesome adding subbing some of ingredients like butter, milk and white wheat flour with more wholesome and/or vegan ingredients. In it the absence of yeast is replaced with adding baking soda and something acidic like vinegar or lemon juice. That’s why there’s no need for proofing the dough. It can go straight into the oven.

To make a traditional Irish Soda Bread (check out this recipe), you need flour, soda, eggs, vinegar, salt, sugar, milk and butter. and for this Rye and Spelt wholesome version you will need:

You can also use nuts or dried fruits like raisins and cranberries instead of seeds, but I do recommend adding something as it makes the bread more moist and delicious. If you do not use anything, it can come out quite dry.

Very. You should be done preparing it in 15-20 minutes. You literally place dry ingredients in the bowl, rub in the cold butter, add milk with vinegar, mix with a spatula, transfer onto a well floured surface and roll and flip the dough until floured enough so it doesn’t stick. And then bake. Yes, so easy. No proofing or serious kneading needed. Just this morning I made two loafs in less then 30 minutes. Definitely beats going to the store to get some, especially now that we’re confined to stay at home.

Apple cider vinegar helps with the rise and the softness of the bread; however, not everyone likes a super soft sandwich bread and so if that’s you, we would recommend omitting it. Otherwise, add it!

Gluten Free Yeast Free Bread Recipe

You can use any non-dairy milk in this recipe. We do recommend that you stay away from strong flavors like coconut, banana, etc.

The only ingredient that we need to worry about is the flour as any dairy free milk can be used, so just use one safe for your allergies.

We have not tested this recipe with gluten free flour, but based on other testing it should work, it would just again be more dense as gluten free flour has a tendency to be.

This bread is more like a crusty country bread than a light and fluffy sandwich bread. Of course, you can and absolutely should make sandwiches with it! And toast slathered in butter (oh my, so good.)

Make sure your baking powder is still active! To test it, add a teaspoon of baking powder to a bowl, then pour 1/2 cup of very hot water over it. If it bubbles heavily, the baking powder is good to go! If not, open a new can of baking powder or make a DIY version if you’re in a pinch!

The best part of this bread is how easy it is to make! With no yeast, there is no need to let the bread rise, and there is very little kneading necessary.

Best Gluten Free Naan Bread (no Yeast, No Yogurt, Dairy Free)

If you’d like to prep a few loaves ahead of time, you can freeze this bread dough for up to 3 months. Form into a disc, then wrap the dough in plastic wrap and place in an airtight freezer bag or container.

Because homemade bread does not contain preservatives, it won’t last very long if left on the counter at room temperature. I typically only leave my bread out for a day. After that, store in the fridge or freezer.

Note that the bread won’t be very crusty after the first day. You can stick the loaf back in the oven at 350 degrees Fahrenheit for about 10 minutes to get that crusty top back.
