I have a bit of a pet peeve: the other day I came across a gluten-free banana bread recipe that called for 2 bananas. I thought, how is this recipe supposed to work? Bananas can vary greatly in size. Two small bananas, mashed, can equal 3/4 cup of puree, while larger bananas could make twice that amount.
In gluten-free and grain-free baking especially, accurate measuring is important since GF flours are less forgiving than all-purpose. The moral of the story is this: mash, then measure your bananas. Or better yet, bust out your food scale and weigh your bananas and other ingredients for the most accurate result.

I loved this vegan paleo banana bread with chocolate chips so much that I've been making a different version lately. It's loaded with spicy cinnamon, gooey dates, and toasted walnuts, all of which give it a baklava vibe (the traditional Greek dessert layered with nuts, phyllo, and spiced syrup).

I've shared lots of banana dessert recipes here on TBG, but for some reason, this is the first banana bread recipe! It helps that it's the best banana bread I've ever tasted.
I've made this recipe 8 times in the last few weeks. They're short little loaves, but still – Jay and I can't stop.
Oddly enough, I actually adapted this recipe from this vegan paleo chocolate chip cookie formula. I had some overripe bananas and wondered whether adding in banana, plant milk, and extra leavening would make a tasty banana bread. I was blown over by the results! Simple Almond Flour Banana Bread (paleo)
This grain-free banana bread recipe is part of a year-long partnership with Bob's Red Mill. Since I was a youngster in my mom's kitchen poking my nose into bags of buckwheat and rye, I've loved experimenting with their abundance of alternative flours. I even wrote a whole cookbook about Bob's Red Mill gluten-free flours (plus a few other flours too).

INGREDIENTS: bananas, chocolate, maple syrup, coconut sugar, cashew or other nut butter, GF flours (almond, cassava & tapioca flour) plant milk, oil, vanilla, baking powder, baking soda, salt
Paleo Chocolate Chip Coconut Flour Banana Bread
Blanched almond flour and cassava flour work together to create a moist, tender crumb. Tapioca flour adds a bit of chew. I use Bob's Red Mill brand for all three, which can be ordered online or found in your local healthy foodie store.
You can use Bob's hazelnut meal or natural almond flour in place of the blanched almond flour, or use tiger nut flour for a nut-free option. If you don't have cassava flour on hand and you eat grains, you can try sweet rice flour or Bob's 1 to 1 gluten-free baking flour instead.
This paleo vegan banana bread is simple to make with just one bowl and a whisk and 10 minutes of active time. It makes a petit loaf that serves 6-8.
Maple Rye Banana Bread (refined Sugar Free, Gluten And Dairy Free Optional)
Cassava comes from the root of the yuca plant which has been used traditionally in cuisines of South America, Asia, and Africa. It's recently gained popularity throughout the West in grain-free diets. Cassava is also prebiotic, meaning that it helps to create a happy home for good bacteria in your gut.
The fine, starchy flour is a joy to bake with. I've found that it blends well with a coarser flour, such as almond flour, coconut flour, or tiger nut flour in baking recipes. Here, it helps the banana bread hold together and gives it a smooth, moist, springy crumb.
In my opinion, banana bread is just a vessel for chocolate. But if you prefer your vegan paleo banana bread chocolate-free, you can leave it off and just enjoy the light, butterscotchy notes of this bread without the earthy flavor of chocolate getting in the way.
The Best Gluten Free Vegan Banana Bread
To make muffins, divide the batter between 9 or 10 individual muffin cups with paper liners, filling them about two-thirds full. Decrease the baking time as needed; begin testing for doneness at 25 minutes.

It’s no secret I love banana bread… considering I have 5 other banana bread recipes on the blog. They’re all of course vegan but also made gluten free, oil free and refined sugar free which is already a pretty tall order. After sharing my #1 favourite fluffy healthy banana bread, I thought I’ve arrived at my destination. I’ve never considered trying to even attempt a paleo vegan banana bread that also covers the whole shabang listed above.
My friend Natalie and I were chatting about a fall recipe collaboration (coming soon!) and we were deciding on what flours to use. I was so intrigued by her vanilla cupcakes, I couldn’t get over how beautiful the texture was! I’ve only worked with cassava flour once with my cauliflower gnocchi recipe but have never baked with it so I wanted to test it out before we decided on our blend of flours. Version 1.0: I used a blend of cassava flour and almond flour honestly? It came out pretty damn delicious. The only thing was I felt it was almost overly moist (which I personally love). But, I knew I could improve it. The advice from Natalie was to add a bit of coconut flour to achieve a more defined crumb. It made sense since coconut flour is more corse and dry.

Version 2.0: The second time around I was pleased with the texture but added a bit too much coconut flour and found that after a day it went a little dry.
Version 3.0: It was perfect. I reduced the coconut flour, increased the amount of nut butter just a bit and the texture was beyond my expectations. Welcome, to yet another delicious banana bread recipe that is absolute deliciousness and perfect for baking season.
