Gluten-free baking can be tricky and even more so when vegan. There is no egg to support the baked structure. So the onus of holding the structure falls on the starches gums, flax/chia/psyllium and other ingredients. GF baking also might not work wellby changing a non gf recipe witha 1 on 1 substitution. Most often you will want to use a combination of flours and starches and also evaluate the recipe. Cupcakes and muffins are easier to substitute when using a premixed all purpose gluten-free blend, but with larger loafs, the loaf will fall or not cook through the center or end up gummy or overly crumbly and dry depending on the ingredients used. It takes many trials and lessons along the way to get to a good gluten-free baked quick bread.

For this gluten free Zucchini bread I use almond flour, whole oats and chia seeds to add that bulk and volume that will hold the bread structure. There are no gums in this bread. You can use 1/2 tsp xanthan for morerise of the loaf. This loaf is full of zucchini, is moist and makes an amazing breakfast bread. Serve warmed with vegan butter orGlaze with your favorite glaze.

Healthy Vegan Zucchini Bread

The chia and zucchini are soaked for some time to allow the chia seeds to absorb some of the liquid and the zucchini to leak as much liquid as it can. This helps make the chia seeds less crunchy and the batter more predictable. Make this with any other shredded veggie or fruit. If you make it, tag me and let me know how it turned out!

Soak the zucchini, chia and sugar mixture for an hour. Add flours and oats and mix in. the batter should be a thick batter. Drop into parchment lined pan. Even it out using a spatula. Top with chopped nuts or seeds if you like.

Cool for 15 mins in the pan, then on the cooling rack. Brush vegan butter on top to soften the crust.

The Best Vegan Zucchini Bread (gluten Free)

We start this recipe off with grating the zucchini and squeezing out its excess moisture. This step prevents the bread from being too dense or gummy and it’s an especially important one with gluten-free and vegan baking because it’s more prone to those issues (don’t worry, no gumminess here at MB, friends).

Next, we mix the zucchini with the remaining wet ingredients. Avocado or coconut oil provides richness, almond milk (or other milk) adds enough moisture to help it rise, and vanilla adds flavor. We found a combination of coconut sugar + maple syrup provided the best combination of natural sweetness, flavor, and texture.

A trio of gluten-free flours is important for making the texture of this zucchini bread undetectably gluten-free. While almond flour gives it a beautiful crumb, potato starch keeps it light and fluffy, and brown rice flour adds structure.

The remaining ingredients include flaxseed meal to keep it from crumbling, baking powder and baking soda for rise, cinnamon for classic zucchini bread flavor, and salt to enhance it all.

Grain Free Zucchini Blender Bread

This vegan gluten-free zucchini bread gets a hint of toasty sesame flavor from tahini, warm notes of maple and vanilla, and pockets of gooey dark chocolate. It's sweet enough to call dessert, but it makes a nourishing accompaniment to brunch or afternoon tea. The texture is what keeps me coming back for more, with a springy, moist crumb from cassava and tapioca flours, plus a flax (or regular) egg.

I adapted this recipe from my vegan paleo banana bread recipe, and I'm currently working on a paleo pumpkin bread version too. I've been experimenting with a primarily grain-free diet this year for health reasons. Though challenging at times, I've enjoyed getting to know with new-to-me flours like cassava, which I used here!

This recipe uses only two (!) flours, and if you don't have them on hand, I've given substitution suggestions. It comes together with just a whisk and a bowl. Pop it in the oven and you're less than an hour away from healthy zucchini bread bliss.

Step 1: Grate the zucchini on the fine holes of a box grater. If your grater only has larger holes, that should work fine too.

Zucchini bread is an old-fashioned American quick bread dating from the 1950's. In the same family as carrot cake, banana bread, and pumpkin bread, it's usually made with grated zucchini, oil, sugar, flour, eggs, and leavening. Though called bread it's actually more like a cake baked in a loaf pan. This vegan paleo zucchini bread still tastes close to classic despite its allergy-friendly ingredient swaps.

Zucchini bread is traditionally healthier than most cakes because it contains zucchini, oil instead of butter, and often whole grain flour (usually wheat). It's usually lower in sugar than a proper cake, and appropriate with brunch or for a snack. This zucchini is extra healthy, being free of common allergens (gluten, grains, eggs, dairy, nuts) and naturally sweetened with maple syrup instead of refined sugar. (Not that dairy and eggs are inherently unhealthy, but you may be avoiding them for health reasons.) Parents trying to sneak veggies into kids' diets often like zucchini bread as a sly vegetable vessel.

Nutritious Gluten Free Vegan Zucchini Quick Bread (oil Free)

First trim off the ends of the zucchini. Then use a box grater to grate the zucchini. I like to use the fine holes so that the zucchini melts right into the bread, but you can use larger holes if that's what you've got.

This recipe is best made with small zucchini where the skin is tender enough that no peeling is required, it just melts right into this gluten-free zucchini bread.

With small zucchini, there shouldn't be any seeds large enough to need to remove. But if your zucchini are large enough to contain visible seeds, scrape them out with a spoon before grating.
