Wholemeal

If you love the idea of baking homemade bread but are put off by all the hands on time it takes then you've come to the right place.

Farmhouse Wholemeal Bread Mix 5 X 500g

My Easy Wholemeal Bread recipe takes literally minutes to prepare, there is no kneading involved at all and proving and baking happens as you get on with other stuff.  Make sure you set a timer though, as it's so easy to lose track of time.

I've always loved crusty breads the most and this one has got a lovely golden crust with a bit of crunch. If you prefer softer crust you can simply cover your freshly baked bread gently with a clean tea towel as it cools which will makes it softer.

No you don't. I've baked this bread numerous times using just plain white and plain wholemeal (whole wheat) flours and the results are the same as when I've used strong (bread flours).

Gluten Free Seeded Loaf (mixed Seed Bread)

You can be pretty brave and mix and match your flours here but I would advise you to keep to 50/50 ratio of white to wholemeal/whole wheat flour for the best results and nice, light crumb.

As with any homemade bread and because of the lack of preservatives it is the best on the day you bake it.

My recommendation would be to eat it fresh on the day you bake it and perhaps the following day and toast it after that. I must say I like to eat my sandwiches toasted anyway so I usually only eat it it fresh when still warm on the day I bake it.

Traditional Wholemeal Bread Recipe

If you don't eat a lot of bread you can easily freeze it. Simply let it cool completely, slice it and pop into freezer safe bag until you need it. To defrost simply take it out onto the kitchen counter where it should thaw in an hour or so, usually less than that. Alternatively, you can simply toast it from frozen until thawed and nicely crisped up.

We love it fresh or toasted for breakfast with the variety of spreads like lemon curd, homemade orange marmalade or this plum and chocolate spread.

For lunch it will make a delicious sandwich with whatever filling you fancy. How about some wild garlic hummus or vegan egg salad? It will also make delicious addition to any soup. Some of my favourites are:

Walnutty Wholemeal Bread

Being bread loving family we have it with dinner sometimes as well. It goes well with pasta dishes or anything saucy as it makes for perfect sponge to mop up the juices!

Leave a comment and rating at the bottom of this post, I love reading them!A wholemeal and white loaf made from start to finish in a Panasonic bread maker (mine is the SD-ZB2512). Use the 5 hour setting to get the best rise or the 3 hour setting if you're pressed for time.

For ages I’ve been using my Panasonic bread maker to make dough, which I shape in a banneton and bake in an oven. Now I’ve enthusiastically returned to using the bread maker to make a whole loaf from start to finish. I love the convenience of it; add a few ingredients to the bread pan, don’t forget the yeast (like I did the other day, ugh) and 3-5 hours later a warm, pillowy loaf appears, hopefully in time for lunch.

Basic Bread Machine Whole Wheat Bread Recipe

I sometimes use 70% wholemeal flour. It doesn’t matter which ratio is used - my Panasonic recipe booklet lists the same amount of water, salt, sugar, butter and yeast for a 50%, 70% and 100% wholemeal loaf.

Allinson's

If I have enough time I use menu 5, the 5 hour ‘whole wheat’ setting. The 3 hour ‘rapid whole wheat’ setting (menu 6) is fine too but the bread doesn’t rise quite as much.

I get on well with Allinson’s flour but I’m not especially loyal to any brand; it’s just what I have in my cupboard at the moment. I make a medium loaf as there’s only two of us (Panasonic’s recipe booklet calls it medium, I think it’s small) but I’ve listed the quantities for a large and extra large loaf as well.

Light Wholemeal Bread

The recipe book advises using butter for this recipe but I use 12g of extra virgin olive oil instead. Nigella’s website states that 150ml of olive oil can sometimes replace 200g butter when baking a cake so I use the same 0.75 ratio.

A reminder in case you didn't know (I didn't until recently): 1ml of water weighs 1g so I weigh the water on my digital scale rather than using a measuring jug as it's quicker and more accurate.

If you want to use the 'rapid whole wheat' 3 hour programme the ingredient quantities are the same but you'll need to add an extra ¼ teaspoon of dried yeast.A simple and easy Whole Wheat Bread Machine Recipe. Artisanal Whole Wheat Bread Recipe (no Knead, Beginner's Bread)

I’ve provided measurements in cups for your convenience, but measuring by weight is best. A digital scale will help you ensure that you are using the correct weight of flour.

The manufacturer’s instructions will tell you to add the liquids first, then the dry ingredients. The instant yeast always goes in last. This ensures that the yeast is separated from the liquids until the kneading begins, and is an important step to follow.

Follow this recipe, using 50% strong whole wheat flour and 50% white bread flour. Increase the yeast to 1 ½ teaspoons, then follow the recipe as written.

Seeded Wholemeal Bread (bread Machine Method)

You should store your homemade bread wrapped in plastic wrap or foil to keep it soft and fresh. Bread machine wheat bread can also be frozen, wrapped well and airtight, for up to two months. Avoid putting bread in the fridge, as the conditions there will dry out your loaf.

This Hamilton Beach programmable bread maker is very well rated on Amazon and available at a reasonable price. You can buy more expensive bread makers, but I would start with a basic one until you’re comfortable and know that you want to use it often.

You should always make sure that your yeast is fresh and active. It could be that your yeast is dead, or you added too much salt or sugar, or you forgot to add the yeast.
