Zucchini Applesauce Bread. One of my favorite recipes of all time. Seriously all time. I use it at work to sneak veggies into a dish where the kids won't notice then, sans chocolate chips of course, and they LOVE IT! The applesauce cuts down on the sugar content and there's not even any dairy! I can't use coconut at work (FDA ruled it a nut 🙁 and we're a nut free facility) so I use plain old vegetable or canola oil but I'm sure coconut oil would work just fine.

You can toast and butter this zucchini bread, but you really don’t need to. It’s so good on its own that I find myself snacking on it on all day even if I have cupcakes in the house.

If it’s significantly smaller (8″ or less), I suggest filling the pan 3/4 of the way to the top and making muffins with any extra batter.
